The ground beef I bought from Trader Joe's on Friday was supposed to be for sliders on account that I'd seen Pepperidge Farm slider buns at the market weeks ago. But as there were none today, and I happened to have eggs, corn flakes, and some dark beer, I figured I'd throw them all together along with some worcestershire sauce, chopped shallots, some left over carrots from another experiement (explaination to follow) and some garlic and shape a free form meat loaf. I hadn't made one in years but with the exception of coming out a bit dry, it wasn't bad.
A meatloaf you make on the stove top. There is also a tomato mushroom sauce that goes with this. See the recipe here.
Turkey meatloaf, sauteed spinach, roasted garlic mashed potatoes.
Turkey meatloaf:
1lb ground turkey (dark)
1T sriracha (chilli garlic sauce)
1 onion (sauteed with 1 clove of garlic)
1/4C Tomato sauce (I didn't have any so I used pizza sauce from trader joe's and it was GOOD. If you have only tomato sauce I would use 1T tomato paste as well)
1/4t. salt / 1/4t pepper
2T brown sugar (for top)
ketchup (also for top)
1 egg
2/3C dry bread crumbs (plain) - if the meatloaf is too loose - add a few more.
Toss everything in a bowl, mix it. Sprinkle brown sugar on top and squeeze ketchup over that.
Bake in the oven on 400 for 1 hr.
At 2nd Ave Cafe in Park Slope, Brooklyn. I chose it because they said it was their most popular dish (go figure, you wacky New Yorkers:). It was a tasy dish, except they mascerated the meat a little too much for me, giving it the consistancy of cat food.
Definitely the best gas station fare I've had. Wild buffalo meatloaf and a mango margarita from Whoa Nellie Deli, Lee Vining.
My wife prepared a meatloaf dinner for my birthday meal. Sides included green bean casserole and baked potatoes.
