Recipe from Kraft. I give it one and a half thumbs up.
2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, lightly beaten
2 tsp. chili powder
1/2 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa, divided
3/4 KRAFT Mexican Style Shredded Cheddar Jack Cheese
PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the salsa and the cheese.
SHAPE into oval loaf in 13x9-inch baking dish; top with the remaining 1/4 cup salsa.
BAKE 1 hour or until cooked through (160ºF). Sprinkle evenly with the cheese; continue baking 5 min. or until cheese is melted. Let stand 5 min. before cutting into eight slices to serve.
Ingredients:
2.5 lbs. 93% lean ground beef.
1.5 lbs. hot Italian sausage
1 green pepper, chopped
1 onion, chopped
2 whole eggs, beaten slightly
1 tsp. salt
1/4 tsp. black pepper
~1 tsp. garlic powder
2 dashes of chili powder
1 tbsp. extra virgin olive oil
3 tbsp. salsa
Directions:
1. Lightly saute onion and pepper in olive oil with chili powder.
2. Combine the beef, sausage, eggs, vegetables, and spices in a mixing bowl. Mush well.
3. Form two footballs of meat, and place them on a tinfoil-lined baking sheet or cookie sheet with raised edges.
4. Batter meatloaves with salsa.
4. Preheat oven to 350.
5. Cook meatloaves approx 1 hour, or until a meat thermometer reads 170 (this is a conservative number).
6. Yay!

Part of the set of toppers for the cupcakes for my best friend to cheer her up.
We used to have a "meatloaf and Nemo" day. Because one day, we ate meatloaf and watched Finding Nemo with my then-boyfriend Jake.
So every year on that date we'd watch Finding Nemo and eat meatloaf!
GARRRROOOOOOSSSS. Too much liquid in this recipe. I would just make what I usually make but add the puree. The orange color was a little strange but there was a lot of tomatoes and ketchup in this. I don't normally add ketchup.
I honestly can't believe this recipe was ever served to anyone. Really. There is no way, even if Jessica Seinfeld were to call me up and tell me personally, that I can imagine this was ever served to ANYONES children.

I am working on my meatloaf recipe.
I use ground beef and polish sausage. I need to make some modifications yet. First version was a little bland. This one is a bit too warm. I didn't intend it to be but I think this polish sausage had some heat to it. Next time ground chuck goes on sale, I'll try it again.
