Meatloaf
2 lbs ground beef
2 eggs, beaten
1 medium onion, finely diced
1 chopped green pepper
Salt and pepper to taste
½ C. ketchup
2 Tbsp. steak sauce
1 Tbsp. Worcestershire sauce
1 sleeve of saltine crackers, crushed
Additional ketchup as desired
In a large bowl, combine ground beef with eggs, onion, green pepper, salt, pepper, ketchup, steak sauce and Worcestershire sauce. With both hands knead mixture until everything is thoroughly combined. Add the crackers and mix again until combined. Form meatloaf into an oval and place in a roasting pan. Pour ketchup over meat as desired. Cover pan and bake at 375 degrees for about 60 minutes or until cooked through.

I already have a how to make it series in my sets, but I just made another one and was checking on its progress in the oven.

Meatloaf is on a strict diet of mealworms now, and although yesterday, I was having trouble getting her to eat more than the innards, she is munching them down like pringles at the moment. She had a fly around my living room for a few minutes, and I quickly whipped out the bat detector - she's officially a Common Pipistrelle, as she was echolocating strongly at 45kHz! Weigh day tomorrow!
Man, do I make good meatloaf. I play pretty loose with the ingredients from loaf to loaf, but here's pretty much what I did with this one:
8 oz. seasoned bread crumbs
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1/2 onion, roughly chopped
3-6 whole cloves garlic
4 oz sliced black olives
4 oz sliced white mushrooms
1 red bell pepper
18 ounces ground turkey
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1-2 eggs
For the glaze:
1/2 cup catsup
1 teaspoon ground cumin
Worcestershire sauce
Chipotle Pepper sauce
1 tablespoon honey
Preheat oven to 350. Knead dry ingredients into turkey and sirloin mix (using thumbs, mostly), combine vegetables and lastly the egg(s), continue kneading until thoroughly mixed. Pack into a pan and bake until internal temperature reaches 155.
Top with the glaze after fifteen minutes of cooking.
It is delishus.
