The cleaned skin is cut into pieces and placed into a double boiler with just enough water to cover it, then cooked over a very gentle heat to extract the collagen (gelatine) from the skin. Too high a heat will denature the collagen and make the glue weaker. If you want to make hide glue but don't have access to fresh skins, an alternative is to use dried pig or cow ears or hide chew toys (available from pet shops). These should be soaked in cold water until soft before cooking. In medieval times, glue for artist use was also made from the trimmings of parchment, which is untanned, dried hide - basically the same thing as the ears/chew toys, but better quality.
