This is from Eat Drink & Be Vegan, by Dreena Burton. The chimi's are not traditional. Had zucchini, peppers and onions and simple seasonings, plus a tomtao lentil sauce that is very tasty & veratile; could be used in many other dishes.
Add the garlic, salt, and flax seed.

A incredible meal made with whatever I could find in the fridge: apples, root veg, yogurt, chicken thighs + lentils de puy. Full o' flavour, I tells ya.

The lentil is an edible pulse. It is a bushy annual plant of the legume family, grown for its lens-shaped seeds. It is about 40 centimetres tall and the seeds grow in pods, usually with two seeds in each.
I always have leftover sausage when I make pizza and I get tired of just adding it to spaghetti sauce. This week my solution was a sausage and lentil soup, with carrots, celery, and potato.

I loves me some cold lentil salad. It's crunchy, oily (in a good way) and leaves your breath smelling like onions.
Cook the lentils as you normally would, keeping them just this side of done. Chill them by running cold water over them. Dice tomato and onion and mix them all together. Salt, pepper. Drizzle with oil and red wine vinegar.
