A incredible meal made with whatever I could find in the fridge: apples, root veg, yogurt, chicken thighs + lentils de puy. Full o' flavour, I tells ya.
Red Lentil Dal
1 can unsweetened coconut milk, refrigerated overnight
3 T ghee, separated
1 small onion, chopped
2 cloves of garlic, minced
1 jalapeno, chopped
½ t turmeric
½ t salt
2 shallots, chopped
1 dried red chile, chopped
3 bay leaves
1 t mustard seeds
Cucumber and Rice Salad
1 ½ cups basmati rice
3 English cucumbers, peeled, seeded, and thinly sliced
½ cup parsley, chopped
3 T dill, chopped
2 T mint, chopped
¼ cup scallions, chopped
¼ cup white wine vinegar
3 T extra virgin olive oil
½ cup Greek yogurt
1. Cook the rice in water with 2 teaspoons of salt. Set aside.
2. In a large bowl combine cucumbers, parsley, dill, and mint.
3. In a small bowl combine scallions, vinegar, oil, and ¼ teaspoon of salt.
4. Add rice, dressing, and yogurt to the large bowl of cucumbers and toss gently. Serve.
It doesn't look appetizing, but it tastes wonderful. Made from a cup of French green lentils with a few pinches of dried thyme, a bay leaf, a chopped carrot, a chopped stalk of celery, and 6 cups of chicken broth. I brought that to a boil then simmered for 30 minutes. While that was going on, I chopped a yellow onion and sauteed it in a couple of tablespoons of olive oil, then, when the onion was soft, I seasoned it with salt and pepper and added three cloves of minced garlic and cooked for another minute or two until the garlic was nice and fragrant. Once the lentils were soft, I added the onion mixture to that pot and then blended it all with a stick blender. I seasoned with salt and pepper and served.
It may look like baby vomit but it tastes divine.

We are trying to eat a little less meat and this lentil bolognese hits the spot nicely. Served with wholewheat spaghetti and the obligatory (and entirely necessary) Parmesan
We ordered this red lentil dish a couple times as it was quite tasty. After we were back in SF, the Turkish girlfriend of a friend of Alex's saw this photo and thought that it was Turkish meatballs as this is exactly how they mold them.

Another vegetarian bento, this time with a middle eastern flavour. The Lentils & Peas is dressed with red wine vinaigrette, lemon, mint, and shallots. It is served with flax & sesame lavash, Greek yogurt, and almond stuffed medjool dates for dessert.
Two bright pink elastic band secure the boxes together along with bamboo cutlery.
