Overall impression. Splendido continues its splendid reign over Canadian cuisine. With much focus of the restaurant team likely on the newest member of the Spelendido family (Nota Bene opening the week after), I was afraid that the dining room would lack a bit of the usual attention and polish. Although not full, the staffs present were attentive and accommodating (don't expect snooty attitudes, but a friendly warm greeting), kind enough to make dietary substitutions and mixing and matching the current tasting menu with other fantastic menu offerings (and one created just for the evening) to suit our table's interest in trying out the restaurant's wears. Featuring many Canadian focused dishes (and wines – oh how I was spoiled with the recent bombardment of old world/French wines), the restaurant's fare may not be able to compete with its US neighbours for refined hotel styled cooking, but it is a wonderful representative of top notch Canadian cuisine. I have a bias for the rich and eclectic source of products that are produced from this country, including game, wild fruits, vegetables and plant products. Each experience at Splendido convinces me more that Splendido's kitchen is probably our country's best in producing Canadian fare using purely Canadian ingredients. The components in each dish were notably fresh and top notch; their pairings on the plate, safe – which may also be the only criticism – things are too safe. But Splendido is not known to be experimental or innovative, just refined and uncomplicated, in other words, good. Oh Canada indeed.

Here's my entry for the July 17 - Aug 5 "Nautical/Beach" Challenge at Impression Obsession (mitrafriant.typepad.com/) and mitrafriant.typepad.com/impression_obsession_news/2014/07...

 

I wanted to make this great nautical quote by Mark Twain the focus of my card. I made a water-colour background with various ocean colours of Distress Ink on a craft sheet and then over-stamped with the Rolling Waves (CC123) cover-a-card background. I also stamped the word "dream" from the "Imagine Words" (3015-SM) cling set to echo the sentiment and - using a stamp positioner and carefully inking individual letters from other words in that set - stamped words such as "sails" and "sailing".
