I love their knobbly nature.

These are made with sharp cheddar cheese and a little bit of paprika, Italian seasoning, and garlic. I used my mini fall leaf cookie cutters to shape them, and they're so cute!

 

They are light, crispy, and SO yummy!

oops, a few days late in posting this weeks bento. my rosemary plant has been quite happy in the heat of late, but i forgot that i had yet to do any real snipping. time for the rosemary polenta squares again!

 

found some ground turkey in the freezer, and cooked it up with a jarred sauce along with some extra garlic, crushed red pepper, and tons of basil form the garden. the lettuce and tomatoes of the simple salad are also fresh from the garden. mmm, summer!

I make gluten free empandas a lot for Daniel to take for school lunches. I attempted ham and cheese ones this time because he used to love the ones we got from our local Argentine restaurant. These ones leaked a bit, and stuck to the pan.

 

Still tasted good, though.

My BFF at work and fellow rock-nerd will no longer be my work-spouse (she's moving to a different job), so I wanted to make her something special.

 

So they didn't turn out as perfectly as I'd envisioned, and some are more just minerals and rocks than specifically geodes, but... well, this one resembles Sphalertie.

 

The cupcakes are gluten-free honey-vanilla cake, iced with a combination of vanilla frosting, various decorating sugars, and edible glitter. (I really wanted to use some pearl sugar but couldn't find any on short notice. Boo.)

So easy - CHEAP - and delicious! Easy to adapt to your own favorite bean or flavor profile. Never buy a spendy GF veggie/bean burger again. :)
