[5] 1 teaspoon (5ml) of white wine or cider vinegar goes in next. Don't use malt vinegar - it contains gluten.

I made two dozen of these for Punxgiving and had enough batter left over to make a small (5") skillet cake. I used the cornbread recipe from the New Farm Cookbook and subbed in the Red Mill gf flour mix in for regular flour. Pretty much fool-proof.
Roasted Beet Lasagnete from "The Artful Vegan" by Eric Tucker, pg. 110-111. Made gluten-free by using gluten-free lasagna noddles, and baked for a little bit at 325 F.

Light vanilla sponge laced with dried fruits and spices then drizzled with a fresh lemon soak. Topped with vanilla buttercream and decorated with fondant.
So.... ummm.... yea.... I have no idea how to photograph dips. LOL (Well, at least not when I only have 5 minutes before I have to run out the door.)

My BFF at work and fellow rock-nerd will no longer be my work-spouse (she's moving to a different job), so I wanted to make her something special.
So they didn't turn out as perfectly as I'd envisioned, and some are more just minerals and rocks than specifically geodes, but... well, this one resembles a calcite and rose quartz geode / agate.
The cupcakes are gluten-free honey-vanilla cake, iced with a combination of vanilla frosting, various decorating sugars, and edible glitter. (I really wanted to use some pearl sugar but couldn't find any on short notice. Boo.)
