The finished product. Not bad for not using a recipe and making something I had never made before, but next time I would leave out the fleur de sel.
1 medium onion, sliced into rings
2 tbsp rice flour
pepper to taste
2 tbsp butter
Beef Stock (I didn't measure how much)
2 small bay leaves
Coat onion rings in rice flour and pepper and fry until translucent. Then add to beef stock and bay leaves and simmer. Mine ended up simmering several hours and it got a bit thicker than I probably wanted. Place in oven safe bowl and top with a gluten-free toast (I used Kinnickinnick brand's "english muffin") and grated romano cheese. Broil until cheese is melted. Makes 1 serving (2 if you are having something else).
These are made with sharp cheddar cheese and a little bit of paprika, Italian seasoning, and garlic. I used my mini fall leaf cookie cutters to shape them, and they're so cute!
They are light, crispy, and SO yummy!
No cook avocado mousse. Vegan, rice, chocolately, delicious!

Gluten free apple cake from the lovely Tebay services in Westmoreland (these are no ordinary service stations!) and of course a nice cup of rooibos tea.
This home-made chocolate has a filling of ganache flavoured with cinnamon. It's dipped in white chocolate and decorated with cinnamon and icing sugar.
Chocolate ganache on the left, Apple on the right.

My first attempt at gluten free banana bread. Since I left out the butter, and had to cook it partially in the toaster oven and partially in the big oven, I was pleased that it came out as edible as it did.
