We celebrated my parents' 50th anniversary in May (it was actually in April but we couldn't all get together until May). I found a wonderful gluten-free baker, cherry blossom cakes (at www.cherryblossomcakesdc.com) who made the cake. It was beautiful and, more importantly, delicious!
The finished product. Not bad for not using a recipe and making something I had never made before, but next time I would leave out the fleur de sel.
1 medium onion, sliced into rings
2 tbsp rice flour
pepper to taste
2 tbsp butter
Beef Stock (I didn't measure how much)
2 small bay leaves
Coat onion rings in rice flour and pepper and fry until translucent. Then add to beef stock and bay leaves and simmer. Mine ended up simmering several hours and it got a bit thicker than I probably wanted. Place in oven safe bowl and top with a gluten-free toast (I used Kinnickinnick brand's "english muffin") and grated romano cheese. Broil until cheese is melted. Makes 1 serving (2 if you are having something else).
Please excuse the rather amateurish presentation. It's been a long day. Read about this cake on my blog.
These are made with sharp cheddar cheese and a little bit of paprika, Italian seasoning, and garlic. I used my mini fall leaf cookie cutters to shape them, and they're so cute!
They are light, crispy, and SO yummy!
No cook avocado mousse. Vegan, rice, chocolately, delicious!

I made a gluten-free bread today with a lot of sunflower seeds. It turned out very well: soft, rich texture and taste.
tons of left-overs from saturday's dinner party i will likely be picking on through the week. not the prettiest lunch, but one of the yummiest!
(and i am still impatiently awaiting my assortment of bento boxes from ebay. . . )
Gluten free apple cake from the lovely Tebay services in Westmoreland (these are no ordinary service stations!) and of course a nice cup of rooibos tea.
Baking with a new baby (in my case, an 11 month old who spends most of her time impersonating a wiggly worm or a monkey) requires a little more organization than baking without. Either way, gluten free living is getting easier everyday.
