These actually started out at brownies, but ended up as donut balls. I didn't really follow a recipe... I used about 4 cups of coconut and quinoa flours, and 2 bags of gluten-free vegan chocolate chips (1 melted, 1 not)... 1 tsp of baking powder, 1 cup of brewed chilled unsweetened iced tea, 1 cup (or so) of soymilk, 1 cup sugar, 1/2 cup cocoa powder, 1 cup soy margarine, plus a couple tablespoons of canola oil, 1 jar of fig jelly... I think that's it... Rolled into balls and baked at 400 degrees for 15 minutes. When they were cooled, I rolled them in powdered sugar.

I love the way the Bosc pear arches toward the French butter pair, yearning for connection, their flesh pressing against each other.
gluten free potato soup
3 russet potatoes
3 red potatoes
2 carrots finely chopped
1/2 onion finely chopped
1/2 red bell pepper finely chopped
1/2 green bell pepper finely chopped
1 tablespoon minced garlic
1 tablespoon salt
1 teaspoon pepper
dash cumin
1/2 cup Sour Cream (optional for creamier soup)
2 cups GF organic vegetable stock
water
dice potatoes, put in huge pan and pour veggie stock in. Add water enough to just barely cover potatoes. Add finely chopped veggies.
bring to boil. Add salt and cumin. Reduce heat, cover and simmer for 15 minutes, or until potatoes are cooked through.
Remove from heat. Use immersion blender to blend some of the potatoes. Add sour cream and stir well.
Will be chunky (depending on how large your potato dices are) and delicious!
While you taste these Coconut Cookies they transport you to a dreamy tropical vacation. The dates are soaked in an exotic white tea. And some of the liquid and tea leaves are combined to the batter to add a light and soothing flavor to the cookies.

The cut-outs are supposed to be Santa with a pack on his back. But, it looks more like a mis-shapen representation of the continent of Africa to me.
