100% Sourdough Bagels, recipe as promised. I’ve been playing around with this the last few weeks and I think it’s ready to share 😊 Feed your starter the night before. The next morning, make a wet poolish with your starter. Mix about 1.5 cups active starter with 2 cups of flour, and 1.5 cups warmish water. Mix well and let rest for 60 minutes. After 60 minutes, add an additional 2.5 cups flour, 1 tablespoon sea salt, and one heaping tablespoon each honey and maple syrup. Mix well, and knead for a good five minutes. It will be sticky, keep going until you have a smooth ball. Add a little more flour if necessary. Lightly cover the ball in olive oil and place in a bowl, cover with tea towel. For the next 4 hours, gently stretch and fold the ball every 30 mins (google “four way stretch”) to encourage gluten development. If it doesn’t look active, place the bowl in your oven with just the light turned on in between stretching. Prepare a parchment lined baking sheet that is generously floured. Cut ball into 12 sections, using your hands, roll each section into a smooth ball, poke a hole in center and shape into bagels. Place on parchment, cover and refrigerate overnight. In morning, remove tray and let sit at room temp while you preheat oven to 450 and bring a large pot of water to boil. Prepare a well oiled baking sheet. The bagels should have doubled in size, if not, wait until they do. Once water is boiling, add a few tablespoons of each sugar and baking Soda. Immediately blanch bagels for 20 seconds per side. (Don’t crowd them, 3-4 at a time is best) . Remove onto a plate or rack, and once they are all done place on prepared baking sheet. Brush with beaten egg white and sprinkle toppings (“Everything” Bagel mix is a mix of poppy and sesame seeds, garlic powder and dehydrated onion). Bake immediately, remove when golden brown. Eat crusty, chewy, hot from the oven sourdough bagels. Chicken stock... yum.

 

Michael is an amazing cook! He does everything from scratch. Here is his best ever (yet) batch of chicken stock.

 

He wasn't feeling well, so he stood for a long time and skimmed the fat and particulates off the top to make this so very clear stock!

 

We eat so much great food! Many meals will come from this...

All from scratch!

This was my first attempt at making a basket from scratch, using a pattern by Lyn Siler called "Amy's Basket". I'm starting to notice a trend that getting the basket started is the easy part! The top half of this design in particular was really a challenge, largely because the handle is built into the entire basket, meaning that the weave must conform to the shape of the handle. The handle for this basket tapers considerably from the base all the way up. Things got a little scary near the end; I had my first try at trimming down the stakes as I neared the top (to keep the vertical spacing somewhat more consistent), so that was pretty intimidating. But, I survived...and finished it halfway through the night :-)

 

Despite my tribulations, it is a very nice, sturdy basket, suited well for carrying any number of items from point A to B.

 

Dimensions: 8" x 8" x 8" (12", including the handle)

After having worked half a year at Noah's Bagels as an entry-level baker - I had sworn to myself that I'd never have anything to do with bagels again. That is, until we started making bagels from scratch, years later at a far better bakery establishment (Portage Bay). I loved it! This was my batch - perfectly shaped, dipped & stone baked. These had the greatest texture, nice & just chewy enough. These were for a weekend breakfast special to be served with house-cured lox; so good!

So, I suppose I bugged Q long enough and he finally gave me his bread recipe.

 

Well.....it turned out very yummy. However, I don't think I let it rise long enough. It is very dense, but hey, it was my first time baking a yeasty bread, so I am pleased.

 

The true test will be when I make it for family this Thanksgiving. Hopefully they will also like it.

This was my second attempt at what allrecipes.com calls "To Die For Blueberry Muffins". The recipe was highly rated on the site. I beg to different. They were just alright, and with the struesel on top they didn't rise very much, so they totally lack in appearance.

I started with two pounds of bing cherries, and turned it into a delicious pie. Only took about six hours (including cooling) from start to pie. More here.

 

The recipe is from Everyday Food (June 2008) and can be found here. I don't think a half hour prep time is accurate. Depends on how good you are at pitting cherries.
