After messing up last night's meet with mates (sorry guys), and working today, the arrival of spicy flatbreads from Mrs W were most welcome! These fellas are so darn tasty!

spread fresh plain yogurt and parsley on bottom, topped with thinly sliced beets, sweet potatoes, leeks, and a few thin slices of cheese.
bake, enjoy.
(hint - pre boil the beets and sweet potatoes before topping the flatbread)
I love flatbread wrap filled with freshly purchased vegetables as the base with freshly roasted beef, chicken or turkey chunks as the topping, but sometimes all I long for is a soft flatbread wrap to roll up my assorted fillings within.

Used the same dough as the flour tortillas. Divided into just four balls (instead of 8) and rolled oblong pieces which are thick for tortillas but thin for pizza crusts.
Seen here after baking on the lowest rack for about 5 minutes @ 500F. I think if I rolled slightly thicker pieces and top-broiled for a couple minutes a side I'd have a decent fake naan.
Made a big batch of Buckwheat flatbread this morning - making sure it is properly dry and crisp by stacking on the warm Rayburn.
