BBQ Crockpot Duck in butter lettuce cups; three little Mini Stuffed Potatoes - I turned them into bento sized potato skins with cheese, green onion and bacon bits; Blue Deviled Egg - standard deviled egg recipe with crumbled blue cheese added to the filling and crumbled bacon bits on top; low-fat ranch dressing for the potato skins; Honey Citrus Fruit Salad

Hard boiled eggs, remove the yolks for a deviled egg recipe of your choice, slice olives for the eyes, and cut carrots for feet end beak, fill up the egg, add feet, beak and eyes and put on the top. The only tricky part is to scoop out the egg yolk with the egg "up-right" instead of halved length-wise and still keeping the "walls" of the egg intact.

These were too pretty and too interesting not to make.
The filling is not far off from a standard deviled egg, but pickling the hard-boiled eggs in beet brine gives them the pretty color, denser consistency, and slight pickle taste. They were really good.
I made two other kinds of deviled egg that I neglected to photograph--one a basic truffle salt deviled egg (always a fan favorite), and the other was such a hit that I may be making more for myself tonight:
Garam Masala Deviled Eggs. I omitted the jalapeno, but I did not miss it at all; the mango chutney gave it a nice heat. I even did the diced radishes for garnish. SO GOOD. Next time you get the urge to make deviled eggs, make these.

I dont usually measure this. I made up the recipe when I was first married at 15. I totally faked my first Thanksgiving! Been making it the same way ever since.
18 eggs Boiled and peeled
6 strips of thick sliced bacon, fried to crisp & chopped (remove the chewy fatty parts.)
1/4 of a large Sweet Onion (Vidalia) Diced tiny.
2 Carrots peeled and grated
Mix all the above with the yolks of the eggs add salt and pepper to taste (Bacon already has a lot of salt so careful.)
Add mayo and a squirt of mustard mix well
refill the white parts of the boiled eggs with this mix, shake on paprika
AND GET OUTA THE WAY!
I had to give the fam their own plate to eat tonight so I could take pics. ;-)
Had a craving tonight for deviled eggs, and spicy ones at that.
1. Hard boil some eggs. My method is to stick them in cold water with some vinegar, bring it to a boil, cover, turn off heat, and let them sit for 15-18 minutes. Then transfer them into an ice and water bath for a while until they're cold.
2. Slice in half, pop out the yolks and mash them with a couple drops of lemon juice, some mayo, and some grainy dijon mustard. Salt and pepper to taste. Actually, everything to taste I guess.
3. Load them back into the egg whites, sprinkle with paprika.
4. Take picture of said eggs and post them on flickr.
5. Eat and enjoy.

20 lb. Turkey, Italian Sausage Dressing, Mac and Cheese, Sweet Potato Casserole, Vegetable Casserole, Oyster Dressing, Salad, Fruit Salad, Mashed Potatoes, Gravy, Cranberry Relish, Deviled Eggs, Homemade Bread....Apple Cranberry Pie, Chocolate Pecan Pie......Waddle, Waddle, Burb! Oh My!
8 Eggs (Hardboiled)
1/2 Tbs Light Miracle Whip
1/4 Tsp Sriracha (More if you like it spicier)
1/2 Tsp Vinegar (I used white wine vinegar)
Being by filling a pot with cool water. (Not cold, just cool). Place 8 eggs in water, and make sure that the water just covers the top of the eggs.
Turn heat to medium. Once it begins boiling-start a timer for 6 minutes. Remove from heat at the 6 minute and put pot in sink. Run cold water into the pan until the water has cooled. Set eggs in fridge for 20 minutes. (Or until fully cooled).
Peel eggs and cut in half. Remove the yolk and place into bowl.
Mash yolks, Sriracha sauce, Miracle Whip and vinegar together. Blend until smooth consistency. Add a scoop of yolk mixture into each egg and serve!
If you want it spicier, add a dollop of Sriracha sauce to each egg top. (Not recommended for faint of heart!)
