When I can't sleep, I count calories . . .

or, better yet, figure out a way to prepare simple meals that are low in such things, yet still delicious . . .

HERBALICIOUS, in fact!

My devilish eggs are always popping up on my stream, so please bear with me as I post another pic, since it is such a wonderful accompaniment to these other dishes!

Upper left is a casserole of "Chicken Provençal" about to bake.

Upper right is a salsa based dish from a Mexican restaurant.

Lower left is a new invention: sun-dried tomato basil tumaro quesadilla with cream cheese, salmon, cucumber & guacamole.

Lower right is self-explanatory!

Nov. 2 is National Deviled Egg Day

Did you know the term ‘Deviled’ became common during the 18th century as a name for boiled or fried foods that were heavily seasoned, especially with mustard, paprika or pepper?

My cousins sent me these beautiful leather coasters for Christmas, and thus far, I haven't used them for their obvious intention!

Deviled eggs make me feel devilish :).

My 1 point breakfast. Oh so good. I filled my eggs with Hope Buffalo Bleu Hummus.

Hurry-hurry, quick-quick... trying to do this during commercial breaks from So You Think You Can Dance... lol, I love that show!

My daughter dropped by just as I was starting to clean up from this shoot (BUSTED!!!) and was laughing and shaking her head that I'd made deviled eggs just so I could take a picture. Yes I did. But in my defense, they tasted pretty dang good, too... so Ha!!!

For me, one of the really fun things about summer is being able to share family meals at the picnic table out in my daughter and son-in-law's beautiful yard. And he makes a fine deviled egg, too... they are both fantastic cooks!!!

When Stormtrooper Bruce was notified his "reward" for all his hard work on one of Palpatine's projects was to run the photo booth for next week's big spring event being held in the Death Star Botanical Gardens, he was less than thrilled.

STB: Guys, as you can see, decided to have our Easter feast this weekend since I'm going to be busy all next week through the weekend doing you know what.

TK-1110: We totally understand. No worries. Too bad you won't be able to enter the Bake Off due to conflicting interests.

TK-432: It's all good. At least it's Movie Night and we're together. And the grub looks great! And um, don't look now, but looks like we have company.

JB: Hello Unka Dude! How are you? I sure missed you, did you miss me? Love your Easter Basket. Guess you're already getting cited about next week. I can't wait either! Just think - Photos with the Easter Bunny! ME!! I'm making souvenirs for everyone who takes their picture with me. You get one, too, accause you're goona be SOOOO busy! Oh, and today my name is Jelly Bean.

STB: Hello, JB. You don't mind if I call you JB, do you? Yes, I can hardly wait to take all those thousands of photos. Oh, boy. How exciting. But um... where's Piglet, your Tattle Droid?

JB: Unka Pappy had to zap Piglet. When I got home, I told him what a great job Piglet did protecking me. He was so happy he tried to hug me. And that's when Piglet grabbed Unka Pappy and held him upside down.

STB: Oh, I see. Sounds scary. So what happened?

JB: Well, it wasn't pretty. Unka Pappy was wearing smiley face boxers. When I giggled, he shot lightening out of his fingers and then Piglet kinda sploded. So, Unka Pappy got me this cute bunny rabbit teddy bear to keep me company.

TK-432: Wow! Again, that's WTMIAO! Way too much information at once!

TK-1110: Something tells me there's more to this story. Dude, what are you two talking about? What's a tattle droid?

STB: You know, there's a time and a place for everything, but now is not the time nor the place. Once the idKay leaves, aybeMay. etGay my iftDray?

JB: Well, sorry I can't stay, Unka Dude! Momma said I could only visit long enough to make sure you were getting ready for tomorrow.

STB: Yes, I can hardly wait to take all those thousands of photos. Oh, boy. How exciting. Getting ready.

The 4th of July brings a new dish to the table. This recipe comes from Everyday Cooking with Dr. Dean Ornish. I doubled the recipe as I wanted more for using as a spread as well.

Instead of using the egg yokes as filling, you use 1/3 cup of the liquid from a can of chickpeas (garbanzo beans) put the beans and reserved liquid into a food processor and add parsley, mustard, lemon zest, garlic, some pepper and process until smooth. Then pour that into a work bowl and mix in some minced red onion and some minced capers. Fill the eggs and sprinkle lightly with paprika. 0% Cholesterol

When a recent mission took Stormtrooper Bruce to a new planet, he returned with a local delicacy which he hoped the guys would be willing to try.

STB: You should go easy on those deviled eggs. That merchant at the market warned me eating too many at one sitting might result in unusual side effects.

TK-432: What? You're telling us now? This is our third plate.

STB: Well, I didn't know they would be this tasty. I'd never heard of that kind of bird before. And I had to tweak the recipe a little to make them more like the deviled eggs we're used to.

TK-1110: What? You're telling us now? What kind of bird is it?

STB: To be honest I'm not 100% sure it is a bird since there were no records of it in the Avian Database.

TK-432: Vader's dogs... you mean these could be reptile eggs? But they taste so good!

TK-1110: Let's get back to those side effects for a mo. What ... oh. I think I see already. Neon purple phosphorescent gas?

TK-432: Cool! Let's see if it glows in the dark.

STB: Let's not. Just step away from the eggs and I'll get us some more burgers.

TK-432: Wait. If they're not bird eggs or reptile eggs, what are they? What else lays eggs? Never mind - I don't even want to know. They taste so.. Ooops, excuse me - again.

Boba Fett: Dude, you think you could fix me a plate of these fancy eggs for tomorrow? The P is stopping by to let me know who he's placed a bounty on this month, and he really, really loves his snacks.

STB: That is just SO wrong I don't even want to think about it. Say pretty please and I'll make it two plates.
