Ingredients:
1 lb (450g) onions, weight is for onions when peeled and finely chopped
2 lbs (900g) "windfall" apples, weight is for apples when peeled, cored and roughly chopped
4 ounces (100g) sultanas
1 ounce (25g) fresh ginger, peeled and grated
1 teaspoon dried ginger powder
2 teaspoons mixed spice
1 lb (450g) soft brown sugar
1/2 pint (300ml) malt vinegar
1/2 pint (300ml) cider apple cider vinegar
1 teaspoon salt
1/2 teaspoon pepper
Directions:
Place all the prepared onions and apples into a large preserving pan and add the remaining ingredients.
Bring slowly to the boil and then lower the heat so that chutney cooks at a rolling boil.
Stir the chutney regularly and make sure it does not “catch” and burn on the base of the preserving pan.
Keep on cooking until the chutney is the consistency of a thick jam and all the liquids have dissolved.
(A trick to check if it is cooked is to draw your wooden spoon across the chutney, if the space that is left fills up with liquid, the chutney is not ready yet).
Spoon the hot chutney into hot and sterile jars and seal immediately.
Makes about 4 lbs chutney.
Store in a dark and cool place and leave to mature for at least 2 weeks.
Will keep in ideal storage conditions for up to 2 years+.

More than dull, grey and overcast this morning; not foggy but definitely misty. Having said that weather conditions great for reflections. Water levels are a little lower it not having rained significantly for some days. Even the consistency of the mud is changing, no longer wet and sloppy. The beginning of March and the start of meteorological spring so hopefully conditions will improve further although forecast for next week not great.
A marshmallow is a sugar based confection that, in its modern form, typically consists of sugar, water and gelatin whipped to a spongy consistency, molded into small cylindrical pieces, and coated with corn starch. Marshmallow probably came first into being as a medicinal substance, since the mucilaginous extracts come from the root of the marshmallow plant, Althaea officinalis, which were used as a remedy for sore throats. Concoctions of other parts of the marshmallow plant had medical purposes as well. The root has been used since Egyptian antiquity in a honey-sweetened confection useful in the treatment of sore throat. The later French version of the recipe, called pâte de guimauve (or "guimauve" for short), included an egg white meringue and was often flavored with rose water.
When I see teal colors, I always imagine a totally tropical ocean, with clear waters that mirrors the blue sky and appears so 'tealy'. It also has a teasing hint of green sometimes so I think of a big open field of just green grass. That revitalizing and refreshing feeling that the color emits is unlike any other.
Similarly, when I think of you, that is how I feel. The truth of your friendship, the reality of your care and most of all, your clarity. You are my true example of consistency, faithfulness and loyalty all in one.

Apparently I wasn't paying much attention to consistency when I snipped the tulips this week; I managed to level the colours but not the bouquet.
Oh well; a little layering never hurt anyone, (well unless you count that one haircut years ago....) at least the light is nice.

The sugar apple is indigenous to tropical America.
The aggregate fruit is heart-shaped, round, ovate, or conical, from 2 to 5 inches (5.1-12.7 cm) in diameter and weighs from 4 to 24 oz (113-682 g). The fruit is composed of loosely cohering segments, which project as rounded protuberances and are easily separated when the fruit is ripe. The pulp of green and purplish-red sugar apples is white or creamy white, with a custard-like consistency and sweet, pleasant flavor. There are numerous, size of small kidney beans dark seeds embedded in the pulp.
Earthworms, beetles, a small mouse perhaps made these tracks. I also found a large centipede in the area but that creature made a larger track which isn't shown on this section. Not sure why some tracks are smooth and others are not but it may have to do with the changing consistency of the mud as it dried out.

Let me spare you the Google Translate: Enough is Enough!
It's the first day of summer, and it's only 16ºC and pouring rain. Let's just say it has put me in a mood.
Here I am, working from home, once again struggling to find a shot for my 365 project. Frankly, my mojo has run out. When you don't leave the house during the week for anything more exotic or interesting than a walk around the neighbourhood, or a quick bike ride (around the same neighbourhood) or a trip to the supermarket, finding something unique to shoot becomes harder and harder each passing day.
I've been on this 365 stretch since January 1, 2021 and shot daily through the pandemic, 6 months of chemotherapy, and more pandemic, all while working from home and only seeing something different on weekends or holidays. Making a photo that I'm proud of sharing every day has taken its psychic toll. I'm done. Worn out. I have photographic standards that I like to maintain and I don't believe I have been able to do so with a consistency or enthusiasm that I'm happy with.
Photography is my hobby, not my job. It's a release. It's relaxing. It's therapeutic. It's not supposed to be a source of stress or a chore.
So with that, I'm out. This 365 project is over for me this year. It's been a good run, but I'm going to go back to making photos that I want, when I want.

Visibility in nature is a fickle concept. Photographers and naturalists always crave perfect lighting and the correct conditions in which to see a place. But, as everyone knows, perfect lighting and visibility isn’t always possible or realistic to plan for. The light can be too bright and blinding- a lack of clouds can make a sky be overwhelming and burnt out. Too many clouds and what should be a brilliant and shining and defined landscape can become gloomy and diminished and murky. Like most things, balance is needed. When I was in Yosemite, I was besieged by clouds one night, had cloudless and bright skies the next night, and then was overwhelmed by smoke, the next two nights. When I was planning the trip, this is exactly what I wanted to avoid- I wanted consistency! But as I was there? Seeing Yosemite Valley react to the changes of visibility with the receding and growth of the light and the evolution of the colors and textures of the environment? The experience was transcendent. Different levels of visibility brought a different awareness to the actual experience of the place: the walls of the valley were thrown into sharper relief and became towering and immediate monuments that could then suddenly drift back into the foreground allowing for closer introspection of the immediate landscape- the trees, the water, the rocks. Colors fluctuated from being vivid and flashy to cool and muted. Even in moments where the gloom and shadows of the valley were accentuated by the sinking sun, the glow left behind by the absence of direct light only left me with an impression of how much depth there was to my surroundings. Visibility, in Yosemite, as in life, depends on your perspective.

The thing about British law is that is sets great importance upon precedent. A lot of new precedents (plural) have been set recently. Some precedents have been ignored due to their age and some have been insisted upon despite their age. In short, there has been much selectivity of opinion/approach rather than consistency of opinion/approach.
However, no matter what you may think of any political issue, you should be troubled by the fact that laws already recently voted in by MPs are potentially being voted down by the use of methods that take only a few hours to complete, by the very same MPs. These new precedents would now allow any extreme future government to do what it wants with impunity. Whatever your political stripe that should make you stop in your tracks.

Kousa Dogwood berries are small fruits, averaging 2 to 4 centimeters in diameter, and have a uniform, globular, to slightly oval shape. The fruits are a type of drupe, comprised of 20 to 40 individual carpels that fuse to form a spherical appearance and are connected to slender, elongated, and fibrous light brown-green stems averaging 7 to 10 centimeters in length. The fruit's skin is semi-thick, rough, and taut, covered in small bumps, creating a pointed, ridged appearance. The surface also ripens from green to orange-red or red-purple and has a gritty and grainy feel with a bitter, astringent taste, making it somewhat unpleasant to consume. Underneath the skin, the bright orange-yellow flesh has a slippery, lightly mealy, sticky, custard-like consistency. The solid, pulpy flesh also encases a few to many small seeds that should be discarded when eaten. Select Kousa Dogwood berries that are bright red and feel soft to the touch. The fruits should be slightly squishy, which signifies that the flesh has converted most of its starch into sugars for a sweeter eating experience. Ripe Kousa Dogwood berries are consumed for their flesh, discarding the skin and seeds. The flesh has a sweet, tropical, and earthy taste with a unique blend of pumpkin, mango, and persimmon-like nuances.

Cyclamen persicum, the Persian cyclamen, is a species of flowering herbaceous perennial plant growing from a tuber, native to rocky hillsides, shrubland, and woodland up to 1,200 m (3,900 ft) above sea level, from south-central Turkey to the Levant. It also grows in Algeria and Tunisia and on the Greek islands of Rhodes, Karpathos, and Crete, where it may have been introduced by monks. Cultivars of this species are the commonly seen florist's cyclamen.
Description
Cyclamen persicum is a perennial, herbaceous plant that reaches heights of about 32 cm (13 in). Wild plants have heart-shaped, fleshy leaves, up to 14 cm (6 in) usually green with lighter markings on the upper surface. The leaf underside may be pale green or reddish. The leaf margin is slightly thickened and usually serrated. As a storage and persistence organ, C. persicum forms a perennial hypocotyl tuber. It arises solely through a thickening of the hypocotyl, the shoot axis area between the root neck and the first cotyledon. The rounded, slightly flattened tuber is about 4 to 15 cm or more in diameter. It is of corky consistency. The roots spring from the underside, and the tops of the spirally arranged, long-stalked leaves of the plant spring from the top.

I haven't been around much lately because we've all been sick with colds! Watching my wee one sniffle and cough is not fun, but she's on the mend. It's our first Christmas with her, and we feel so blessed!
***Since you're all loving this photo so much, I thought I'd share the experience behind it. My hubby and I took a morning drive a few weeks ago, and were driving around in the hills a few miles away. In the morning light, I saw a silver tree. A sparkling SILVER tree. It took my breath away. I yelled "stop!" as I often do when we're out driving around, and jumped out of the car and walked through some mud to get to the tree. It was some sort of evergreen/fir tree, covered, and I mean covered, in drops of dew. I'll never forget that moment, because I've never seen anything like it before. The drops sparkled like little jewels all over it. We've gone back a few times since then, and there's been a little bit of dew, but nothing like that first day that I saw it. It was a magical moment.

The three mile trail through the forest to Shi Shi Beach normally contains a mile of mud hole. Luckily the trail was dried out enough that the mud was the consistency of bread dough. After the sun set we hiked back to the car by flashlight with the sound of coyotes yipping in the distance.

There is no processing... no massive amounts of berries to pick/buy, wash and prepare.
You can have jam in about an hour...
I began with blueberry because I have several bags of frozen berries. Next I want to try strawberries.... or some mixed berries....
It is just 2 or 3 ingredients.

As it mentions in the recipe...no water necessary if you use frozen berries ... but, I did add a bit of lemon juice to cut the sweetness and also..I only used 1/4 cup of sugar. They do say less sugar can affect the consistency of the jam...but, I spooned off a couple tablespoons of the liquid as it cooked and it was great. Surprisingly...the berries stay whole during cooking even if they were frozen ... I thought they would become soft and disappear... but no...so do a bit of mashing if you want less whole berries in your lovely, very delicious jam.

In My Garden .... This frog lives in an old belfast sink at the top of my garden. How it survives is a miracle, as the water in the old sink is the consistency of sludge!
Cette plante pousse sur tout le pourtour méditerranéen. Elle est sauvage et les paysans la cueillaient autrefois parce que son cœur était comestible et avait un peu la saveur et la consistance de l’artichaut. La plante fait d’ailleurs partie de la famille de l’artichaut. Elle donne une grosse fleur qu’il n’est pas rare de découvrir, une fois sèche, à la porte des maisons des vieux villages.
Elle s’ouvre en effet, en son centre, comme le tournesol, pour capter la lumière solaire. Mais le cœur se resserre lorsque l’humidité tombe et que la pluie s’annonce.
C’était donc pour les observateurs avertis qu’étaient les bergers, un baromètre qui permettait de prévoir la météorologie.
Ce chardon porte le nom familier de cardabelle. Les bergers se servaient de ses feuilles épineuses pour démêler la laine de leurs bêtes.
This plant grows all around the Mediterranean. It is wild and the peasants used to pick it because its core was edible and had a bit of the flavor and consistency of the artichoke. The plant is also part of the artichoke family. It gives a large flower that it is not uncommon to discover, once dry, at the door of houses in old villages. It opens, in its center, like a sunflower, to capture sunlight. But the heart sinks when the humidity drops and the rain begins. So it was for informed observers that the shepherds were a barometer that predicted the weather. This thistle bears the colloquial name of cardabelle. The shepherds used its thorny leaves to untangle the wool of their animals.

These cookies are great for using up sub-optimal eating bananas. The consistency is a bit chewier than a muffin, not as crumbly as cakey cookies and they stay pretty moist overall. They are what I like to refer to as excellent ‘breakfast cookies’ for the following reasons:
1) the texture is perfect with coffee
2) they are not too sweet
3) the banana and oats give the impression of healthy eating
If you really like ginger, try doubling it because the flavor baked away to a pretty weak undertone in the end.
P.S. - I am especially proud of this post because this photo is actually mine (not my ghost photographer’s work) and, at the risk of appearing overly self-congratulatory, I think it looks pretty good if I do say so myself…

Clinging to the Invisible God
Can I hope that I am now, in a new area, traveling more securely, and that my commitment to the hermit life will be something more than a comic gesture? Is the whole thing just a fantastic private comedy? I question myself and my whole life very seriously. The real absurdity of it all! The unreality of so much of it. I mean especially the ***unreality*** of years I look back on when, being Master of Students, for example, my job gave an appearance of substance and consistency, but actually I was floating in a kind of void! I think I enjoyed it to a great extent, but, if I had been more fully
aware, I would probably have not been able to cope with it.
In a word, what I see is this: that, while I imagined I was functioning fairly successfully, I was living a sort of patched-up, crazy existence, a series of rather hopeless improvisations, a life of unreality in many ways. Always underlain by a certain solid silence and presence, a Faith, a clinging to the Invisible God. This clinging (or rather God’s holding on to me) has been in the end the only thing that has made sense. The rest has been absurdity. What is more, there is no essential change in sight. I will probably go on like this for the rest of my life. Hear “I” am, this patchwork, this bundle of questions and doubts and obsessions, this gravitation to silence and the woods and to Love. The incoherence!
