Simple fish recipe for a middle of Lent Friday.
* Preheat oven to 400 F degrees
handful fresh Flat-Leaf Parsley
2 lg. Garlic Cloves
1 Lemon (zested)
Coarse Salt
* Combine parsley, garlic, lemon zest, and salt and finely chop (this is also known as a gremolata)
135 g. (1 ½ c.) Plain Bread Crumbs
* Combine with parsley and garlic mix in a dish for breading
Herb Bread Crumbs Mixture
Extra Virgin Olive Oil
4 (170-225 g. (6-8 oz.) Cod Fillets
* Brush top of each fillet lightly with oil
You may want to bread each filet seperately on a seperate dish, unless you want to throw out 2/3 of the breading.
* Place top side down in breading mix
* Brush baking pan lightly with oil
* Place fillet crust side up on pan
* Bake at 400 F degrees for 12-15 minutes, until firm.
Not a bad recipe but... it's fish. I’ll be using the recipe again later in the week to introduce my preference for serving it.
