The large-scale conglomeration of my favourite pie dough, my mom's Apple Square topping and a new apple pie filling I whipped up with a blend of Pyure stevia baking blend, regular sugar, cinnamon and cornstarch. The kids tomorrow will be surprised!

I am so well pleased with my coconut oil experimentation.

     

I made vanilla frosting incorporating coconut oil. It is not purely coconut oil, but rather a combination of butter, Crisco®, and Tropical Traditions® black label coconut oil.

 

The moon pies and cupcakes are boxed cake mix which is incredibly inexpensive. I divided the box in half by weight and made two batches, one with coconut oil and one with vegetable oil. The batch with coconut oil won hands down.

 

Cupcakes at altitude is a bit of a trick. You can not get a straightforward answer on this by searching the internet. Most recommendations are to add a few tablespoons flour and to increase the eggs. I just backed off from the water instead of adding flour. I oiled the pans with coconut oil and used a scant tablespoon of batter per cup. This turned out to be too much. Pictured above are the coconut oil batches using a tablespoon of batter. Later batches used a teaspoon of batter. Made with vegetable oil, they all collapsed.

 

The moon pies were made with a coconut oil and a tablespoon of batter. I dropped the batter on Silpat®. I should have used only a teaspoon and even denser batter. Oh well. Next time.

 

For the record, this frosting is not an improvement over commercial frosting, IMHO. But I'm not giving up. It occurs to me buttermilk, or cream cheese would be an improvement. I collected a dozen recipes and averaged the amounts. All the recipes I collected said, "This is the best!" They're not. It's a bit too saccharine to suit me. Another thing I learned; the bowl of my Bosch mixer sits atop the motor which gets hot. It doesn't do to blend saturated fats for much longer than a few minutes. It melts the fat, and that doesn't do. I had to re-chill it and fluff again. Although the coconut oil is very stable at room temperature, it hardens more than butter when chilled. It's fun.

 

Still, after all I've read on high altitude baking, cakes, cupcakes etc., and the difficulties encountered by bakers, I must say, coconut oil appears to be the perfect ingredient to control results. I melted it to liquify the fat before mixing it in.

The ice bucket is awesome because we had just ruined 2 of our insulated ones by putting them both into the dishwasher. This metal Budweiser one is larger than any ice bucket we have owned, but it still fits in our freezer.

 

Carolyn is trying to grow her hair out, and she heard that coconut oil is good for conditioning the ends, so she put it on her wishlist.

 

The bubblegum vodka was very tasty. We had some at our pre-New Year's Eve party.

 

We got Rummikub, which we've wanted since playing it at Cape Cod! And Left-Center-Right, which we've wanted since playing it at one of Brad & Mandy's parties!

 

The celebrity pop-up book is entertaining, but broke upon first use like pop-up books oft do.

 

The spinning light was actually needed, because we were almost considering buying another one for ourselves. However, the lightbulb is so dim that it barely does anything. Once it burns out, we will see about replacing it with a brighter bulb.

 

Carolyn got Clint a new electric shaver, since the beard trimmer on his no longer worked, so he had been using 2 different devices (hair trimmer + electric razor) to shave. Now he can go back to using one device.

Rhassoul Clay with Castille Polka Dots - Great for shaving or a face bar.

 

This bar was made with Olive, Coconut, Palm, Soybean and Africa's Best Oil with Ginsing. Have you ever seen Africa's Best Oils? They are originally for thicker, richer, ethnic hair and loaded with great stuff like:

 

Soy Bean Oil, Walnut Seed Oil, Kiwi Fruit Extract, Olive Fruit Oil, Castor Seed Oil, Sesame Seed Oil, Jojoba Seed Oil, Carrot Seed Oil, Sweet Almond Oil, Tocopheryl Acetate, Safflower Oil, Calendula Extract, Yarrow Extract, Cucumber Extract, Carrageenan Extract, Ginseng Extract, Sage Extract, Comfrey Extract, Aloe Extract, and Fragrance.

It's good to let your soap air out between uses for a longer lasting bar. Store your handmade soaps in a cool dry place letting them breathe. I cut mine in quarters to make them last longer :-) and this way I can use a different soap everyday - yay me!

 

Hand crafted soaps are so good for your skin. No added chemicals and all the natural glycerin is retained. I'll never go back to buying store bought chemically infiltrated soaps.

An updated, scaled back version of my original Soy Awesome Cookies (yummysmells.ca/2007/11/baking-cookies-sneeky-sneeky.html), these vegan cookies are filled with flavour on all angles: from the pudding mix to the maca powder, barley flour and coconut oil. They are a hit with everyone (especially kids), and nobody will know there’s tofu in them either!

Boules de « pâte à biscuits » superaliments (Jess Michael)

(extrait du livre Cru de Kate Wood)

 

390 g (13 oz) de vos noix préférées, trempées au moins pendant ½ heure (les noix de cajou et les amandes constituent un bon mélange)

45 ml (3 c. à soupe) de beurre de noix de coco (ou huile de noix de coco)

120 g (4 oz) de raisins secs

60 g (2 oz) de dattes juteuses fraîches

15 ml (1 c. à soupe) de cannelle

Graines d’une gousse de vanille

2,5 ml (1/2 c. à thé) de sel fin de l’Himalaya/de l’Atlantique (facultatif)

60 g (2 oz) de baies du lyciet (goji) (facultatives mais recommandées)

60 ml (1/4 tasse) de poudre de chocolat cru/copeaux de fèves de cacao cru moulues

45 ml (3 c. à soupe) de nectar d’agave ou plus au goût (facultatif)

 

Faire fondre le beurre ou l’huile de noix de coco à feu doux. Ajoutez tous les ingrédients dans votre robot culinaire et mélangez jusqu’à l’obtention d’une pâte. Goûtez pour vérifier si elle est assez sucrée et si la texture convient. Vous pouvez ajouter du nectar d’agave ou de l’huile de noix de coco si vous voulez un meilleur mélange. Confectionnez les boules. On peut les rouler dans la noix de coco. Garder réfrigéré.

 

J’ai réfrigéré la pâte avant de faire des boules dans la paume des mains, cela facilite l’opération.

Balls "cookie dough" superfoods (Jess Michael)

(excerpt from the book by Kate Wood Raw)

 

390 g (13 oz) of your favorite nuts, soaked for at least ½ hour (cashews and almonds are a good mix)

45 ml (3 tbsp) butter, coconut (or coconut oil)

120 g (4 oz) raisins

60 g (2 oz) fresh juicy dates

15 ml (1 tbsp) cinnamon

Seeds of a vanilla bean

2.5 ml (1 / 2 teaspoon) of salt from the Himalayas / Atlantic (optional)

60 g (2 oz) of berries wolfberry (goji) (optional but recommended)

60 ml (1 / 4 cup) of raw chocolate powder / chips cocoa beans raw ground

45 ml (3 tbsp) of agave nectar or more to taste (optional)

 

Melt butter or coconut oil over low heat. Add all the ingredients in your food processor and mix until a paste. Taste to see if it is pretty sweet and the texture if necessary. You can add agave nectar or coconut oil if you want a better mix. Sew the balls. We can roll in coconut. Keep refrigerated.

 

I refrigerated the dough before making the balls in the palms, it facilitates the operation.

A modification of these cookies: www.flickr.com/photos/reid-bee/9213305642/ which were in turn an adaptation from wearychef.com/2013/06/24/ricotta-cookies-with-nutella-swirl/. These are tender cookies made with homemade ricotta, ground coffee bean brittle, stevia and spelt flour, then rolled thin and spread with a mixture of caramel sauce, almond butter and slivered almonds. Perfect with a cup o' joe!

This Corona Lime polka dot soap is made with real beer! Nothing but the goodness of beer, beer, beer in here. Beer is good for your skin and hair. To the top I've added lime fragrance oil and enriched the whole darn thing with shea butter, liquid glycerin, castor oil and avocado oil! Full of moisturizing goodness :-)

 

You will receive one bar of appoximately 4.5+ ounces.

 

I use my soap as shampoo bars as well. It's a fun way to get clean from head to toe in one fell swoop ~ schwooosh! I then use a (very light) jojoba oil, shea butter and avocado butter mixture about every three days. I have very long, curly, unmanageable, frizzy, gnarly hair... and it actually pleases me. Not to mention no chemicals left to leech their way into my scalp! See how I smile in my pic? All because of natural remedies :-)

 

My method: Lather up a wash cloth really REALLY good and squeeze it out onto your hair. This is easier then trying to lather your hands and then transfer. Scrub it up and use the remainder for your body. Close your eyes for the hair part though - or ouch! Then rinse and you are all done. You've saved water, time and smell great too. Ah…

 

*I only use my 'plain' soap bars for shampoo bars. I don't use any soaps that have clay, or oatmeal, coffee, poppy seeds, flowers, herbs… etc. You get the picture right? I don't want anything leftover hanging around making me look silly.
