I'm hesitant to call this a fail, because even though it took twice as long to bake as the recipe stated, it was wonderfully moist, tender and textured. Perfect BBQ food.

 

¼ cup coconut oil, at room temperature, plus more for buttering pan

½ cup non-hydrogenated shortening

½ cup sugar

12 packets Truvia (or ½ cup sugar)

3 tbsp homemade egg replacer, mixed with ⅔ cup warm water

1 cup 100% fruit jam

2 tsp ground cinnamon

1½ tsp ground allspice

½ tsp salt

1½ cups all-purpose flour

1 cup non-dairy “buttermilk” (I used almond milk and rice vinegar)

1 cup spelt flour

1 tsp baking soda

1 tsp baking powder

⅔ cup chopped walnuts

1/3 cup roasted lentils (optional)

 

Preheat oven to 350 degrees. Grease a 9” springform pan.

In a bowl, beat coconut oil, shortening, sugar, Truvia, egg replacer and jam until well combined.

Beat in cinnamon, allspice and salt.

Mix in the flour until almost combined, then add all the “buttermilk”.

Mix until just combined, then beat in the spelt flour, baking soda and baking powder until well mixed.

Fold in the walnuts and roasted lentils (if using)

Bake 1 hour, until a knife inserted in center emerges clean.

One of my favorite childhood breakfast foods was cinnamon, sugar and butter on white bread toast.

I remember my Mom mixing the cinnamon and sugar in a shaker bottle when I was able to make it myself.

Here is a new twist on an old favorite, cinnamon, coconut oil and a drizzle of agave nectar on toasted whole grain bread.

Cubed salmon in coconut oil vinaigrette with rigatoni pasta and fresh vegetables. Barely cooked.

 

The coconut oil is heated and the vegetables are barely cooked. The lime juice is added to complete the vinaigrette and the salmon is added at the very end and cooked briefly and barely using mostly carry-over heat. Served warm.

 

* rigatoni pasta

* two tablespoons coconut oil

* two stalks celery

* half an onion diced

* garlic clove cut in slivers

* mushrooms sliced (not cooked)

* half a bell pepper (not cooked)

* half a small zucchini

* juice of half a lime, added to coconut oil and vegetables after they're cooked but still in the pan

* salmon steak cubed, added at the very end, barely cooked through

We use coconut oil as one of our main cooking fats, along with local pastured butter and organic olive oil. Coconut oil has a higher smoking point than olive oil and butter, so it's very useful in high heat cooking. It makes the best popcorn when mixed with ghee and you can't beat potatoes fried in coconut oil. I've tried many different brands of coconut oil, and a few different varieties before finding Tropical Traditions and falling in love with their products. I have many of their products in my pantry: Gold Label Extra Virgin Coconut Oil, Expeller Pressed Coconut Oil, Coconut Cream, Shredded Coconut and I also get my tuna from them and I love them all - if you're looking for great quality coconut products look no further.

 

I use the various Tropical Traditions products for different things. The Gold Label Extra Virgin is a fragrant coconut oil, meaning that is smells of coconut and infuses food with a slight coconut flavor. If you've ever tried using it for cooking mushrooms or something you quickly realize that it works in some applications and not others. I do not like the virgin oil when it comes to frying potatoes, mushrooms, onions or other savory type applications. It does however work beautifully in baked goods where a hint of coconut enhances the flavor. I use the Virgin Coconut oil in my healthy carrot oatmeal bites. It also makes basmati rice taste exotic and tropical. Simple add one Tablespoon for each cup of rice and you'll be pleasantly surprised at how delicious the rice is. I also use it for hand & body lotion, hair conditioner and I use it to season all of my wooden cooking utensils. I love having one product I can use for so many things.

They're said to date back to the late 1800s when the wives of New England sailors would make these for their husbands to take out to sea because they traveled so well. These are made with 100% whole grains, Omega rich almonds and walnuts, and magnesium rich molasses and Demerara sugar.

Shampoo Bar All Natural Essential Oils and Extracts

 

I've been mulling around with this idea for quite some time. I've used my own soaps for shampoo bars and that was alright with me. But after researching forever I've created a recipe specifically for hair.

  

My hair is waist length, dry and curly with flyaway baby hairs that drive me nuts. This shampoo bar leaves my hair very soft, controls the flyaways, smells nice. I even woke up in the middle of the night because the smell and feel of my scalp was so intensely soft I couldn't believe it! It cleans beautifully, leaving my hair shinny, soft and even full bodied!

 

So let me break down the ingredients…

 

My base oils are: Olive, Coconut, Palm, Castor, Wheatgerm, Jojoba, Walnut, Rice, Avocado, Sunflower and Shea Butter.

 

Essential oils used are: Rosemary, Carrot Seed, Calendula

 

Extracts are: Nettle and Chamomile

 

Also added: Liquid Silk, Vitamin E, Fresh Aloe Vera and BTMS (vegetable based conditioning emulsifier)

 

I've added no extra coloring or scent to this save the wonderful natural scent of these oils combined! I love this shampoo bar and it's been a long time coming. I hope you enjoy it the same and I encourage you to research these ingredients to find out just how wonderful and beneficial they are for your hair.
