on a plate dusted with chocolate powder are slices of blackcurrant and chocolate muffin alongside banana and vanilla icecream topped with blackcurrant sauce all sprinkled with crushed dried hibiscus and spots of blackcurrant sauce

these muffin segments were cut from one large muffin just as i did with the cheese muffin flic.kr/p/2rgconG unfortunately i didn't photo the large blackcurrant and chocolate muffin

i replaced the white chocolate chips with dark chocolate powder
just before i added the blackcurrants i dipped them all in chocolate powder. i'd read that if i dip the blackcurrants in flour before adding to the mix in the final stage it will help to prevent them from sinking. i thought i'll dip them in chocolate powder then whether they sink or not at least they'll taste delicious!
the remaining blackcurrant and chocolate muffins were boxed for the freezer to eat as and when
