The GREATest seafood chowder the world has to offer. It was the kind of tomato and light cream broth with mussels, cod, etc. Deeeeelicious!
(sorry, I never measure)
1 bottle clam juice
water
1/2 onion, chopped
2 stalks celery, chopped
about 8 mini potatoes, quartered
a few scallops
parsley
1/2 can 2% evaporated milk
Old Bay
1 bay leaf
thyme
white pepper
Cook onions and celery in olive oil until softened. Add clam juice and some water (slightly less than 1 cup) and bring to a boil. Add potatoes, Old Bay, bay leaf and thyme. Reduce heat and simmer for 10 minutes. Remove bay leaf. Add scallops and simmer for 5 minutes more, until the scallops are cooked through. Add evaporated milk. Season with white pepper and top with parsley.
Another trip to the Longhorn Steakhouse in Queens - we seem to be re-visiting a lot of our favorite places lately. This is their shrimp + lobster chowder, which was just OK for me.

I made a pot of potato corn chowder today. It was very yummy. My husband usually makes this with crab, but the crab is too expensive anymore for soup. Check out the big osyter crackers. I love crackers and found these at the local Wegmans supermarket. I guess they are popular in the New England area. I liked them, Dennis did not.
