Clam chowder is any of several chowder soups in American cuisine containing clams and broth or milk. In addition to clams, common ingredients include diced potatoes, salt pork, onions, and celery. Other vegetables are not typically used. Clam chowder is usually served with saltine crackers or small, hexagonal oyster crackers. The dish originated in the Eastern United States, but is now commonly served in restaurants throughout the country.
I drove down to the waterfront to catch a few photos of the local wharf rats going about their business when I remembered a greasy diner on Illinois Street that served a decent bowl of chowder. It was a chowder with just enough bacon grease floating on the surface to remind a guy that he wasn't eating at some fancy joint downtown. That's how I came upon this gritty wharf scene--a man with a camera and a stomach begging for a roll of antacids. Next time, I'll stop downtown before hitting the port.

Porcupine fish are seen regularly around Sydney but can be shy. This one was happy to pose for my camera :-)
Night dive within the netted off area at Clifton Gardens / Chowder Bay in Sydney Harbour... roughly 4m depth and fairly poor visibility. Good fun dive and loving my new heated vest keeping my toasty!
Porcupinefish are generally slow-moving.
They have the ability to inflate their bodies by swallowing water or air, thereby becoming rounder. This increase in size (almost double vertically) reduces the range of potential predators to those with much bigger mouths. A second defense mechanism is provided by the sharp spines, which radiate outwards when the fish is inflated.
They have upper and lower teeth that fuse into a shape of a parrot's beak; they use this beak to eat molluscs and sea urchins.

> Made famous by: Kathy Perdue of Thomaston, who got the recipe during her student days at Troy University from the wife of a fraternity adviser. "Dr. and Mrs. Thompson were very special people, and she was a wonderful cook, " Perdue said. "I have never tasted clam chowder like this, and it is very easy to multiply for larger crowds."
Because canned oysters and clams are fully cooked, it's best to add them to the chowder just before serving --- they need only to be heated through.
Zucchini and Corn Chowder is a chunky soup loaded with veggies and basic spices. It is perfect to have for dinner with a few slices of bread on the side. Here is how to make it.

I'll blog about this eventually, but it's a beautiful vegan 'corn chowder' with corn, sweet potato, roasted pepper, fresh basil and rice milk.

for me, eating healthy during the winter usually involves soups and stir fry. and i'm not complaining one bit.
One of my covid cooking experiments, this is a crab and corn chowder. It only requires bacon, onion, garlic, chicken stock, potatoes, lump crab meat, frozen corn kernels, milk, cream, and optionally old bay seasoning (or a seafood seasoning of your choice). The bacon is just used to provide a bit of fat for cooking the onion and garlic, then used as a garnish.
