Pike Place Chowder! Our lunch before the Savor Tour... it was "ok"... Splash Cafe hands down still has the best Chowder in the West Coast =p
Another soup I ate at Panera and decided to recreate better at home...and I succeeded.
This has fresh and frozen corn, Yukon Gold potatoes, celery, sweet onions, shallots and red peppers. It was made with chicken stock, thickened with a roux and finished with only a little bit of 2% milk...so it's a lot healthier than most chowders seem to be. Other than the fact that I topped it with bacon (and green onions).
I'm getting pretty skilled at my soup making...I haven't used a recipe for the last few that I've made. Sorry, I had to pat myself on the back.
a couple of weeks ago at Quilt Guild holiday potluck, a lady made this pot of shrimp chowder was to die for. I have been wanting to come up with my own. It was fabulous...my 10-year-old say "between this and ice-cream, I'll have this any day!"
(It thickened up a bit after I took the picture.)
Makes 2 servings.
ingredients
2 links frozen breakfast sausage
1 tbsp butter
1/2 medium onion, cut into 1/2 in pieces.
1 clove garlic, chopped
1 carrot (or 5-6 baby carrots), cut into 1/4 in pieces
1 potato, cut into 1/2 in pieces.
1 cup frozen sweet corn
3/4 cup milk
3/4 cup veggie broth
1/4 tsp kosher salt
1/4 tsp black pepper (plus more for taste)
steps
1) Warm up breakfast sausage in microwave (1 min). Cut into small pieces, about 1/4 in thick.
2) While sausage is warming up, Heat up butter in a small sauce pan. Add onion and garlic to melted butter, cook until tender.
3) Add carrots and breakfast sausage. Cook for about 5 min, stirring occasionally.
4) Add potato, milk, veggie broth, salt, and pepper and let simmer for about 15 minutes.
5) Once potatoes are tender, add in the frozen corn. let cook for about 10 more minutes uncovered.
Note: If the soup is too watery, take a few tablespoons of milk and dissolve a little bit of flour in it (a tsp or so) and add to soup. the soup will thicken as it stands.
Chowder tastes great garnished with some cheddar cheese, with some artisan bread to round out the meal.
The small deli inside the general store offers a pretty extensive menu. Cooking is done in a microwave and toaster oven and the soups are kept in a steam table set up ready for service.
