It didn't bother me that the cafe was serving everything with paper plates and plastic cutlery - I guess they haven't been open that long. But hey, if your clam chowder is served in a strong paper cup instead of a bowl, that just gives you the option of taking it to go, right?

Clam Chowder Custard
Onion, Celery, Razor Clam, Smoked potato, Old Bay

Corn, potatoes, and milk from the Farmer's Market. Chives from the yard. Time to stock the freezer with quick lunches to use during our busy autumn season.
4 cups vegetable stock
2 cups plain, unsweetened soy milk
1 tbsp. parsley
1/2 tbsp. thyme
1/2 tbsp garlic powder
1 tbsp margarine
salt and pepper to taste
1 16 oz. can of corn (with the water they're packed in)
2 medium potatoes (about 1/4" cubed)
2-3 carrots (same as potato)
1 to 1 1/2 cups chopped broccoli
1 1/2 cups chopped mushrooms
1/2 cup chopped onion
1 cup small pasta ( I like corkscrews)
Put the stock, soy, corn, margarine and spices in a large soup pot and bring to a boil. Lower to a slow simmer and add potatoes and carrots. Add water to cover everything with about an inch or so to spare.
Saute' mushrooms and onion together in a little olive oil and add to pot.
Add broccoli and pasta.
Let simmer 'till the pasta is cooked. The longer you let it cook the thicker the broth will get. I like it pretty thick.
