Bought a sampler from Corleggy Cheese at the Temple Bar food market. There is a variety of their Drumlin cheeses, with the green peppercorn variety right up front. The round one in the back (my favorite) is the Corleggy. All delicious.
The cheese tastings at Au Fond are borderline academic - everyone gets a packet of information about the cheeses they'll be trying.
Rice, layer of thinly sliced shrimp and scallions, and a heap of two types of cheese that I don't remember. One was smoked gouda and the other is some sort of hard cheese (similar to parmesan). Baked it, and splashed it with some sake after it turned to a nice color, and then let the alcohol burn off in the broiler. Smells nice, tasted even better, I'm going to die of clogged arteries.
I forgot to make a note of the maker, so I'm going to have to take a wee bit with me into the cheesemongers for identification purposes, like a weirdo. Again.
I thought there was a little old lady who sat and churned a large stick in order to make cheese. This was a really impressive look at the actual process, was very cool to see. Check it out next time your in that area.
