For me it has to be creamy tangy cheddar. English. Growing up in India it was Amul. Salty and processed. Things are different now. Cheese is being produced locally from Haryana to Himachal.
The Toasty like the Masala Omelette has been Indianised to a comforting level. Green Chillies and onions are melted into the cheese sandwich. Comfort food while you wait for the local government to process the paperwork.
This one was found in Leh Ladack.
I forgot to make a note of the maker, so I'm going to have to take a wee bit with me into the cheesemongers for identification purposes, like a weirdo. Again.
I thought there was a little old lady who sat and churned a large stick in order to make cheese. This was a really impressive look at the actual process, was very cool to see. Check it out next time your in that area.

We think this is cottage cheese in the making. Either way... cheese! Of course I got excited and had to buy some fresh cheese from Beecher's!
I bought a triangle of their "Flagship" and some California made goat cheese gouda. Because... goat cheese!
Comfortable and familiar.
They know how to run everything smoothly. Look at Swiss raclette, the dish of gently melted cheese. We will melt like cheese.. The empire of Swiss gentle touch.
A really rich and fluffy cheese tapas dish with a sweet fig-like jam.
