These are my chicken quesadillas :D Packed with yummy delicious cheese and onions and tomatoes (this is the first time I've added cilantro and it tasted wonderful).
Really easy to make (I use the George Foreman Grill) and they taste oh so good ^_^

3.03.07 - I had a Stamp Party at Jackie's house and was really excited about having a reason to cook. We got home around 6 from the grocery store and I finished these and was out the door at 7:15. Very easy to make and really yummy. I got the recipe from the WW Comfort Foods cookbook.

This week's Pioneer Woman recipe was her Olive Cheese Bread, and like the BBQ Jalapeño Poppers, it's a keeper! As with most of her recipes, I made a few changes to help it not be quite so deadly -- used Smart Balance margarine instead of butter, light mayo, about 3/4 cups less Monterray Jack cheese than was called for, and whole wheat French Bread. It still rocked!
Had quite a bit of spread left over, so we can slather it it on something else later. ;)
