For lunch today, I drove a bit further for a Jollibee Yum Burger with Cheese, Palabok Fiesta and Peach Mango Pie. Sarap Pinoy!

A nice bread with black pepper and just a bit of cracked red pepper. Had some trouble with getting the yeast to rise though.
In Texas, we call this queso and dip chips in it. In Wisconsin, we call it soup and eat it with a spoon.

We actually looked at the truffle bits in here with a microscope. Yep, they're real truffle bits--we were able to see big brown, reticulate ascospores (photos coming). They make the cheese smell delicious.
The cheese selection was very well curated, ranging from mild to strong.

This started out as a shot of racks of camillia cheese being cured to develop their final flavor and texture but now it looks more like a microscopic version of the molds that grow in feta or gorganzola:)
