This was the other addition we made to the tasting menu. I hadn't tried this on previous visits, and seeing all the good reviews, we went for it. I'm so glad we tasted it, but it was definitely too much tood!
The cauliflower was in three different forms in this dish - pureed (mmm), in tiny couscous pearls, and in larger pieces. These were all layered, and they came together beautifully in each bite.
Healthy eating for 2013.
Mashed cauliflower with shallot bits, pan roasted scallop, and 1 teaspoon of turmeric infused olive oil. Tasty and healthy.

It started snowing last night, and by this morning the farm and Polk County are blanketed in heavy, wet snow. School children are enjoying a snow day, and the turkeys and chickens are trying to get dry. You can see from these images that their feathers are a little too wet for comfort. Stay warm and dry everyone!
I never did like cauliflower until I had it lightly smothered in Swiss Béchamel sauce with buttery and slightly crunchy Parmesan bread crumbs topping it off. Crazy what that combo can do for a veggie. ; ) It's too bad it had a chance to cool off enough to stop bubbling before I got a chance to start snapping pictures. I'll have to be quicker next time!
Spicy Cauliflower soup, almond mousse that melted before good pic was taken, snap peas, and pea coulis sauce.
Cauliflower Pizza - Attempt #2 - OK. I wanted to experiment a second time to see if I can get a crispy crust. After pulsing the cauliflower, I wringed it out as much as possible to get out the water (if this didn't work, I will try the cheese cloth next). Also, I would leave the crust in for 45 minutes, instead of 25 to see if there was a difference.
For the crust, used only two eggs this time. I didn't use large eggs...these were kind of small, so I used two. For the crust, used a little salt, pepper and oregano.
Baked in 450 for 45 minutes, realized that it's crispy on the edges but not in the center.
Oh well, added the toppings (blanched tomatoes, onions, peppers and mushrooms - next time, I will probably caramelize the onions) and low fat mozzarella cheese.
But as my second attempt in trying to get the cauliflower crust crispy...
The Result: FAIL
Not yet crispy. Delicious but still eggy. Will try the cheese cloth and parchment paper for baking next.
