We made a cheese cream soup with the purple cauliflower. Because the flavor is mild and has a soft texture the soup was great!

A member of our produce buying club "donated" several extra heads of cauliflower last week. In an effort to use them up, I decided to grind them up and try making crackers with them. I was aiming for a plain type cracker (no spices) that could complement both sweet and savory toppings. They turned out quite well. They are light and crunchy, though, on their own, they definitely don't have a lot of flavor. I've been crumbling them on top of salad or topping them with almond butter and berries.
The "recipe" went something like this:
4 heads of cauliflower (processed in food processor to "rice" consistency)
4 cups soaked and sprouted buckwheat goats
1 cup ground flax seed
1 cup ground hemp seed
4 small zucchini
10 small carrots
1 tbsp sea salt
Spread on Teflex sheets and dehydrated for about 18 hours, flipping onto mesh (removing Teflex sheets) at the 8 hour mark.

Week 4: Cooking
After coming home from a 4day vacation in Dunsmuir, near Shasta, I committed to making some super healthy, yummy meals for the week. The Recipe for Caulifower Salad in Alice Water's The Art of Simple Food is both delicious and easy - with minimal prep (good for busy parents!)
