My wife with some nice cauliflower from last years garden...

I have a lot of cauliflower this week, so I decided to create something with it. I used the shredder attachment on my food processor and processed three small heads of cauliflower and one large yellow carrot. I made a dressing from 1 tbsp of almond butter, 1 tsp stoneground mustard, a pinch of sea salt, dash of coconut aminos, a swig of Braggs apple cider vinegar, chopped green onion and black pepper. I mixed it in with the "rice," and added mushrooms, chopped parsley, chopped tomatoes, about 1 tbsp of sprouted hemp seeds, and a small handful of raisins. I made a couple wraps for Darren, using chard leaves and this "rice" mixture. Then I chopped some chard into shreds and added it to the rest of the cauliflower to have a dish for myself later on. T'was tasty!

Cauliflower Pizza Crust

 

1 head cauliflower, break into florets (remove stem)

1 whole egg

3/4 cup shredded mozzarella and Parmesean blend

1 tablespoon Italian seasoning

3 pinches of Salt

3 pinches of Pepper

 

1. Rice the cauliflower in a food processor or grater. , place it

2. Microwave on high for 6 minutes or until cooked.

3. Place the cauliflower in cheese cloth and squeeze excess moisture out.

4. Mix together the cauliflower, egg, mozzarella and parmesan mixture,Italian Seasoning, and salt and pepper.

5. Press (with hands and spatula) the mix

onto a silicone baking mat or parchment paper lined

baking sheet.

6. bake at 450F Degrees until lightly golden brown,

roughly around 20 minutes

 

Pizza Toppings:

Top with Fresh Mozzarella, salami, and Tomato sauce.

with flat beans and mushrooms.

When I plated it, I realised croutons would have been nice but it was too late...

 

Method: Break up cauli, cook in stock until tender, puree with a stick blender, season with nutmeg, black pepper and a little salt, add the sliced mushrooms and pre-steamed flat bean chunks, continue to bubble until the shrooms are tender, fold in the crumbled stilton, stir until dissolved and serve.

I started out just to take a picture of this purple cauliflower that Jeremy planted along with a variety of other "specialty" cole crops. We got mostly broccoli plants but low and behold I came across this purple cauliflower today. I meant to just snap a picture but then I realized I had the video option on so I filmed it a bit. It's a bit jumpy but it shows some of the other plants right around the cauliflower to include beautiful bolting broccoli.

We made a cheese cream soup with the purple cauliflower. Because the flavor is mild and has a soft texture the soup was great!
