Organic cauliflower from my backyard.

After I had baked the little pink cakes and while the oven was still hot, I prepared a cake for my lunch(es). I put in it a small cauliflower and a small pattypan, red onions, Paris mushrooms and black olives, grated parmigiano, eggs and flour, salt and pepper, olive oil, maple syrup, thyme, rosemary and basil leaves... I was inspired by this recipe:

This is another photo from my project “The Light Inside” in which I introduce smaller or bigger light bulbs in fruits and vegetables. The light coming from its core gives the subject a different appearance from what we are used to. Not every fruit or vegetable transmits the light properly and some need more, while others need a less powerful light source. Carving into the fruit needs to be done carefully and not more than necessary to place the light source somehow central. For harder vegetables a drill is ideal to carve a symmetrical channel of an ideal size.

A new type of cauliflower now starting to appear on the market.

Helping make some Instant Pot soup, I dissected a cauliflower and this is what was left - the hidden part of the plant, the skeleton we rarely see. I took a break from the slicing and dicing for a quick photo op to document my anatomy lesson.

I have grown prettier ones but I am sure this is the biggest one I have ever grown.

Stir fried pork and cauliflower with cilantro and lemon zest.

Sparassis crispa. Grows from the main roots at the base of old pine trees.

This was shot in the immediate vicinity of Varanasi (Benaras) in a part of the city which is located further the railroad station, where tourists never go and where I realize how extended the city can be.

I had a meeting with some people who were late and I started to take a few pictures of the market settled on both part of the railway.

This boy was selling cauliflowers, it was late in the afternoon so I believe that he was helping his family after school time...

Picked the first cauliflower from my garden today.

My wife pointed this out in a supermarket yesterday and I had to have it to photograph then eat.

It is a Romanesk cauliflower.

I was intrigued by the patterns and shapes in it.

Strobist Info: Nikon SB-700 @ 1/8 power - camera right and Yongnuo YN560-II @ 1/4 power - camera left. Both flashes were diffused by large Rogue Flash Benders. The SB-700 was fired via Nikon CLS, and the YN560-II was in slave mode.

Sprassis crispa or cauliflower mushroom is not rare but I have not seen very many over the years. While I have photographed several this is the first on we expect to eat. It appears to be in good shape but likely will be a pain to clean.

Also known as Heading broccoli or Romanesco broccoli

Purple cauliflower is not dyed. Its signature color comes from the same antioxidant found in red cabbage and red wine: anthocyanin.

Usually when I do a whole head of cauliflower I steam it first and then proceed to bake with a cheese sauce towards the end. This time my husband found a recipe he wanted me to try.

It was deliciously different! I would have preferred to have lightly steamed this before proceeding with recipe also. But since we had warmed up left overs the following day, it became more to my tender liking.

 

1 head of Cauliflower

1 1/2 cups of plain Greek yogurt. I used 0% fat yogurt.

1 tbsp Garlic powder

juice and zest from one lime. I only had the lime juice so I used some of that.

1 tbsp Cumin

1 tsp Black pepper

2 tbsp Chile powder

1 tsp Curry powder

2 tsp Kosher salt

 

Trim the bottom of the cauliflower to remove the stock and green leaves. Combine all

ingredients and then dunk the cauliflower into the bowl and smear the marinade all over. Place the cauliflower on a prepared baking sheet and roast until the surface is dry and lightly browned, about 40 minutes. Let the cauliflower cool for 10 minutes before cutting it into wedges. Serve along side with a salad. In my case I made a kale and bean salad.
