Kitchen Cauliflower Chiaroscuro

More flowers! Couldn't think of anything to do until I got the vegies out for dinner and ... voila! Now I better get the dinner cooked.

I have always loved cauliflower. But I've never tried preparing it this way before. I thought this was delicious, but Sam likes the regular dough crust pizzas. This was a nice treat for a change! In fact, the next time I make this, I'm going to try doing it in a 9 in square pan and serve it as a regular one dish meal. Either way, I thought it was good!

 

CAULIFLOWER CRUST PIZZA

 

Ingredients:

 

1 cup cooked, riced cauliflower

1 cup shredded mozzarella cheese (could be reduced to 1/2 cup and still be just as good)

1 egg beaten

1 tsp dried oregano

1/2 tsp crushed garlic

1/2 tsp garlic salt

Olive oil (optional)

 

Pizza Sauce

Mozzarella cheese shredded

Other additional toppings of your choice

 

Directions:

 

To rice your cauliflower, take 1 large head of cauliflower, remove the stems and leaves, and chop the florets into chunks. Add to a food processor and pulse just until it looks like rice. Or, you can grate the cauliflower with a cheese grater if you don't have a food processor.

 

Place the riced cauliflower in a microwave safe bowl, add 1/4 cup water, and microwave for 6-8 minutes, stirring half way through.

 

To make the pizza, preheat the oven to 450 degrees F. Spray a pizza pan or cookie sheet with a nonstick cooking spray. (my pan has little holes all through it, so I put mine on parchment paper).

In a medium bowl, combine the cauliflower, mozzarella cheese and egg together and stir until well incorporated. Add the oregano, garlic, and garlic salt. Transfer to the cookie sheet and shape into a 9 inch circle. Brush the crust with olive oil to help it brown in the oven.

 

Bake at 450 degrees F for 15 minutes until the crust is browned and cooked through the middle.

 

Remove the pan with the crust from the oven, add your sauce and toppings. Place under a broiler at high heat ( I just placed back into the oven) until the cheese is melted and bubbly.

 

Allow the pizza to cool slightly, then cut into slices and serve.

We got this in our CSA box last week, and we have no idea what it is. It's quite similar to cauliflower, but greenish with a cool fractal shape.

One of places I wanted to survey with my drone on the Paria Plateau was this rounded dome east of Big Knoll in Cathedral Valley. It is mostly composed of what Michael Kelsey calls BB&CR: "big brains and cauliflower rocks."

 

Many have commented on the cerebral appearance of Navajo sandstone that erodes in this fashion, but not as many have referred to its cruciferous vegetable nature. BB&CR is common around the plateau.

 

Cauliflower Dome is mostly white, with some subtle orange swirls. More outcrops of BB&CR continue northward into Middle Reservoir, where orange stains become more frequent.

Recipe :

Cauliflower ( cut into florets ) – 1

 

Marinade ~ All purpose flour 2 to 3 tblspn

Cornflour / Cornstarch 2 tblspn

White pepper Powder !/2 tspn . Salt to taste.

 

Sauce : Onion – 1 big, chopped

Ginger – 2 " piece chopped

Garlic – 5 to 6 cloves , sliced

Green chillies / Serrano peppers – 2 to 3

Soy sauce – 2 tblspn

Tomato ketchup – 2 tbsp

Red chilly sauce – According to taste.

White Pepper powder – 1tspn.

White Vinegar – 1tsp

Sugar – 1 tsp

Salt

Oil

 

Heat salted water in a big stock pot. Boil the cauliflower florets for 4 to 5 minutes and drain the water completely. Make a thick batter with the marinade ingredients. Dip the cauliflower florets in the batter and deep fry into golden brown. Drain them on paper towel . Set aside.

 

In a wok, heat oil, add onion, ginger , garlic and , green chillies Saute till the onion becomes brown. Add all the sauces, pepper powder, vinegar, sugar and salt. Mix well and heat for another 1 min. Add the fried cauliflower pieces and mix well. Make sure that the cauliflower pieces are well coated with the sauces. Remove from flame.

 

Garnish with finely chopped Green onion leaves. This a dry version of the recipe. If you want more gravy. Mix 1tspn cornflour with 3/4 cup water and add along with the sauces. Let everything boil together. Then add the fried cauliflower pieces.

 

PS No need for Ajinomotto. Black pepper can be substituted for white pepper. Don't use tabasco for red chillie sauce.

I think the cauliflower has a wonderful structure/surface.

In his book Pudd'nhead Wilson, Mark Twain wrote: cauliflower is nothing but cabbage with a college education.

Not much of a food photographer here, but I couldn't resist this salad of 3 colors of cauliflower. Hard to believe this is the same botanical species as cabbage, kohlrabi (no english word for this, ey?) and Brussels sprouts...
