Tried out this Cauliflower Soup Recipe as suggested by kimhas7cats this past week. It was amazing. I think next time I'm going to add in some red potatoes and some bacon.

 

I love Panera Bread's Baked Potato soup, but it's a little too rich for me, and I'm all for making my own. This soup tasted a lot like it and with some bacon and potatoes it would really taste like it!

Fried cauliflower appie with spicy sauce and roasted almonds.

An ingenious recipe from the farms I'm getting the vegs from -- I'm glad of it since I didn't know how best to use the big cauliflower I got. It, onion, garlic, tomato, parsley, salt, pepper and parmesan = roxor. Smelled absolutely delicious while baking (30 minutes).

The perfect dish. Fry some mashed-up garlic, galangal, chili, cilantro roots, trassi and sereh; add pea aubergines and small florets of organic cauliflower. The cauliflower was simply amazing, such a depth in flavour! Totally addictive. Add frozen peas, shrimp, sliced portobello mushroom and let this simmer for 15 minutes. In the end, add tomatoes, some santen and some cream and sprinkle on cilantro. Eat with a kind of naan or roti bread.

It's a Friday in the middle of January and I've got a day off work.

 

The plan - to do something then wander to Borough Market for some Perry from the fantastic cider stall.

 

The problem - it's damp and may rain.

 

The result - I visit the Dome to see how plastic and awful it is, then start walking on the Thames Path towards Woolwich - well why not?

 

The first piece of scenery? 100 cauliflowers...

Cauliflower

Roasted, pickled, grated. (Decoded: 3-way preparation of cauliflower: (1) Creamed cauliflower terrine, (2) pickled cauliflower, and (3) pureed (purple) cauliflower.)

 

Notes: This was not only one of the prettiest dishes of the evening, it was one of my favorite.

 

I love all things pickled. The acidity in the pickled colourful florets paired excellently against the soft, creamy, cauliflower terrine (think cauliflower gratin at room temp). There was also a nice, fresh-tasting swatch of cauliflower puree to help make everything adhere together nicely.

 

This was a simple dish. One that I would enjoy in a (much) larger portion for summer brunch al fresco with some chilled white wine.

I went to the wednesday organic local market... and I found a friend growing with old seeds orange cauliflower... eaten they're absolutly wow! Sweeter and softer taste then white ones :-)))

So, the creamed corn from the last post got added to a veggie mash and then shallow fried to make little savoury cakes.

 

I could have just used mashed potato but have done a bean and cauliflower base here.

 

Cook up a can of white beans and a head of cauliflower. Drain well. Blend to a paste, and if needs be (I needed to do this) pop back on the heat to remove some moisture if it looks too wet.

 

Add flavour - I was going for a cauliflower cheese feel so used dijon mustard, two heaped TBSP nutritional yeast, salt and black pepper.

 

Let cool. Add the creamed corn. Mix and form into 12 blobs, or more if you want smaller cakes.

 

Put some flour (I used spelt, as that's what I had) on a plate and cover the blobs, patting them down into patty shapes. The flour will also help the mix firm up.

 

Shallow fry until golden brown on both sides, put on kitchen roll to soak some of the oil.

I've tried my best to get my kids to make healthy choices at meal and snack times. One way to do this is to go to the local farm and find the best, freshest produce. I picked up Black Twig apples and this gorgeous cauliflower today.

 

Eating healthy, organic food and exercising is beneficial. But these actions don't prevent type 1 diabetes. We don't know why type 1 happens, why the body decides to attack its own islet cells, causing the pancreas to stop producing insulin. There is no cure for diabetes. Yet.

Cauliflowers are dong well

This is so easy and tasty... we usually eat most of it before it's done dehydrating, as we like it with a little moisture left in it, but if you leave it for 12 hour or so, it gets really crunchy and makes a great snack or salad topper.

We just put small pieces of cauliflower into a big bowl or ziploc bag and toss around with nutritional yeast, sea salt, black pepper and galic powder... and a little spicy pepper if you like it spicy. Easy!

Modern science has revealed that, although it sounds unusual, cauliflower and cocoa are a perfect match! This dish features a cocoa jelly, dried cauliflower, caramelized cauliflower and dark chocolate puree, and a velvety smooth cauliflower soup.
