ooohh.. soo goood.. I forgot to get a good pic when it came out of the oven because we were too busy noshing on it.
The newest addition to the knitting shelf: a delicious-looking cauliflower floret.
There's also an aubergine and a carrot, but they were early efforts and Nicola considers them unfit for public viewing.
'Popcorn' cauliflower.
INGREDIENTS
1 head cauliflower
2 to 3 tablespoons olive oil
1 teaspoon Kosher salt
coarsely-ground black pepper, to taste
Sesame seed oil is tasty substitution for olive oil (tossed with sesame seeds).
PRPARATION
1. Preheat oven to 400°F.
2. Rinse cauliflower; cut into quarters. Cut off and discard leaves and cores. Chop into popcorn-size pieces.
3. Toss cauliflower with olive oil, salt, and pepper.
4. Spread in a single layer on baking dish (lined with aluminum foil or parchment paper.)
5. Roast 30-40 minutes, turning every 10 minutes. Done when caramelized on edges but still tender.Roast for longer if larger pieces or needed, but check often. Do not burn!
6. Serve immediately.
Experiment with spices: I like Mrs. Dash and Spike, both salt-free.

2000 cauliflower cous-cous with solid aromatic herb sauce 671
Around 2000, many chefs (including Thomas Keller of French Laundry) presented food in a "clever" way, aka play on concept or terms.
Here we were presented with a cauliflower couscous that had been pulsed in a rotor three times to create fluffy crumbly texture. Around the "couscous" a ring of lamb jus; surrounding that a deconstructed sauce made of solid aromatics including orange bitter gelee, orange rind, herbs (basil, parsley, saffron, etc), toasted crushed hazelnuts, etc. Really interesting and visually beautiful. Quite a nice dish particularly when the "sauce" components were mixed well with the "couscous."
This was a good match with the cider.
