Megan put together a few decent sized cuts of roast that we had gotten at the farmers' market and we had steaks. Instead of mashed potatoes she mashed cauliflower and sweet potatoes into a mash. Throw in some green beans and you're golden

I made it! It was awesome. Seriously.

 

Approximately, I did this:

 

4 hard-boiled eggs

1 tbsp sunflower oil

1/2 small onion, chopped (I used a yellow one)

1 garlic clove, minced (my garlic was bad, but I keep a jar of minced garlic cuz I really like garlic, so I used more than the required amount.)

1/2 tsp grated fresh gingerroot (yeah, like I could find that here, so I used ginger powder, probably a full tsp)

1 tbsp medium curry paste (always have this handy, it's awesome. I used red)

1 tsp tomato paste

1 tbsp lemon juice

salt

2/3 cup vegetable stock or broth (I boiled a cup of water and a vegetable bouillon cube and it boiled down to 2/3 cup)

2 cups cauliflower florets

4 tbsp plain yogurt

3 tbsp chopped fresh cilantro (some people hate fresh cilantro, so i sprinkled the dried kind at a different stage of cooking)

 

1. Cut the hard-boiled eggs in half and set aside while preparing the sauce.

2. Heat the oil in saucepan (I used a big ol' wide, fairly shallow saucepan) over medium heat.

3. Add the onion and cook 5 minutes, stirring occasionally, until golden.

4. Stir in the garlic, ginger, and curry paste and stir-fry 1 minute.

5. Stir in tomato paste, lemon juice, salt, and veg stock (I added the cilantro here).

6. Bring mixture to a boil, then add cauliflower florets, reduce heat, cover and simmer 8 to 10 minutes til the cauliflower is just tender.

7. Stir about half the hot mixture into the yogurt then return mixture to saucepan.

8. Add the eggs cut side down, and heat through gently, taking care not to let the sauce boil.

 

I put down a bed of greens, a blob of rice, and this stuff on top. Seriously good.

Kashmiri Gobi

(Bloemkool uit Kashmiri)

 

Blend in wet grinder or blender until smooth:

1 big onion, chopped

4 cloves garlic, chopped

5 cm ginger, chopped

 

Slowly sautee this paste in some oil until dark, dry-ish and fragrant.

Then add:

 

1 t kurkuma

1 t cayenne

1 t ground cinnamon

1 t ground cardemom

½ t ground cloves

4 bayleaves or salamleaves

1 t sugar

1 t salt

 

Sautee for another 30 seconds or so, then add:

1 tin of tomatoes

30 gr raisins (or a little more)

 

Add 400g of cauliflower and cook until the cauliflower is to your liking.

Probably between 7-12 minutes.

Finish with:

30 gr roasted cashewnuts (or much more)

 

Serve with nasi kuning.

This is called Purple of Sicily cauliflower.

This dish is so pleasing to make because the colourful ingredients look so good and all you have to do is toss them together in a bowl and then bake them in the oven for 45 mins. In this photo you can see: cauliflower (including some leaves), saffron thread (soaked), green olives, red onion and sultanas. You can tell you are suffering from flickritis when you buy funny-coloured vegetables just to take a photo.

We ate it afterwards, it was just like ordinary white cauliflower but the cooking water turned blue.

Made pickled cauliflower last night, this is how it looks this morning. We'll give it another day or so to fully pickle before diving in and tasting. Should be yummy! Recipe: majamaki.com/2012/06/pickled-cauliflower/

capers, preserved lemon, brown butter, hazelnut, parsley.

 

There are few things that are as classic and as simple as brown butter, capers, (preserved) lemon, and hazelnut.

 

Except for raisins (which can also work). But for the raisin adverse, this dish comes sans those shriveled bodies. So rejoice. And eat another cauliflower floret.

Sicilian Cauliflower salad with crunchy breadcrumbs seasoned with cinnamon

I bought a Romanesco cauliflower for Jane and she made enough of this for our entire department. It was good and it was the first time I tasted Romanesco cauliflower. It tasted a bit like broccoli and somewhat like cauliflower. Really, it had its own flavor.

Spicy cauliflower masala made with Chinese and Indian sauces.
