Add equal parts beetroot and water to a large pot and bring to a boil. Drop the heat to a low-medium range, and let simmer for at least 30 minutes.

Absolutely delicious.
Hell delicious! The Beetroot relish turned out great tonight. Simple green salad with some marinated feta on the side.
