I pulled the first of my beetroots at a group gardening session on Wednesday, and they were much admired. (The background is an old napkin revived with some stitched shibori at my mum's dye party a few weeks ago.)

*Run*, don't walk to get this beetroot from your local M&S store (if you have one). The most delicious food known to man.
Dice 1 small can of corned beef and add to:
half an Iceberg lettuce, cut into strips;
half a jar of crinkle cut pickled beetroot
a small tub of seafood cocktail sandwich filler (yes, yuck!)
Dress with a little salt and olive oil, and the juice of half a lime.
I always lack fine presentation – and I didn't have a serving ring for a nice circle – but the tastes were great!
My own recipe: Beetroots with mashed potatoes and brown peas with thyme, rosemary and crushed mustardseeds served on beetroot circles. Accompanied by an aubergine mousseline on a reduction of applejuice, balsamico and raspberryvinegar. Topped with crème fraîche and parsley.
A good combination of hearty, sweet, sour and fresh.
Inspired by the TV show TopChef, where young cooks are competing for a job in The Grand hotel. Making smeared stripes looks easier on television even though my mousseline had the right consistency to be smeared.
Extra cool tidbit: real beetroot juice was used to color this table red during varnishing!
