Lattrop/Breklenkamp - On the farmyards are still often are somehow 'Bake houses', one of which is very special. Through the roof of de Bake house from 1738 on the yard of the family a/d Jonkershoesweg grows a more than 300-year-old oak. The leaseholder of the Bake house wanted in 1900 a shed for his swine building. That if the Baroness, on condition that the stable to the eighteenth-century English oak would come back. The size of the tree takes annually about three inches and slide the pans with it.

Today is Anzac Day in Australia - www.awm.gov.au/commemoration/anzac/anzac_tradition.htm - what else could I be baking today other than Anzacs? Feel free to help yourself to one... they're still warm... :o)

Now that golf has returned I can also get back to the Friday night ritual of baking goodies for the Saturday morning group. So even if my golf is crap tmw at least I'll have some chocolate brownie to cheer me up.

This recipe is really good and I thought using red liners would be nice with the rhubarb. I am a dork.

Rhubarb Streusel Cakes -

For topping

3/4 cup all-purpose flour

2/3 cup packed brown sugar

1/2 teaspoon cinnamon

1/8 teaspoon salt

5 tablespoons unsalted butter, softened

1/2 lb fresh rhubarb stalks, cut into 1/4-inch dice

3 tablespoons confectioners sugar

For cake batter

1 1/4 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1 stick (1/2 cup) unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1/2 teaspoon vanilla

1/2 cup whole milk

Special equipment: a nonstick muffin pan with 12 (1/2-cup) muffin cups

Preparation

Preheat oven to 375°F. Generously butter muffin cups and top of pan.

Make streusel for topping:

Whisk together flour, brown sugar, cinnamon, and salt in a bowl. Blend in butter with your fingertips until mixture forms small clumps.

Make batter:

Whisk together flour, baking powder, and salt in a bowl. Beat together butter and sugar in a large bowl with an electric mixer at medium speed until blended, about 2 minutes. Add eggs and vanilla and beat until fluffy, about 1 minute. Reduce speed to low and add flour mixture and milk alternately in 2 batches, beginning and ending with flour mixture and mixing until just combined.

Top and bake cakes:

Divide batter among muffin cups (each cup will be about half full). Toss rhubarb with confectioners sugar and sprinkle batter with rhubarb, then crumble streusel evenly on top. Bake in middle of oven until tops are golden and a tester inserted in center of a cake comes out clean, 22 to 25 minutes. Cool cakes in pan on a rack 3 minutes, then loosen edges of cakes with a small sharp knife or small metal spatula. Remove cakes from pan and put on rack to cool slightly.

I love to bake cookies. However, no one in my house likes cookies except for Oreos and Chocolate Chip.

At Christmas I get my cookie fix by baking 25-30 different recipes, some tried and true, some new. Then I give the cookies away to friends and family.

'Cos cookies are delicious...

I thought I would wait to post this image of Haytor till it got a bit warmer! This was on the eve of Devon's first Met Office red warning for snow. Later on the drifts were huge but it didn't stop this being one of the most bitterly cold visits to Dartmoor I have made at sunrise.

Ears of wheat in the midst of our summer heatwave. An antidote to all my recent shots of old cars ;-)

Shot in the fields local to me in northern Surrey where the farmer seems to grow two distinct varieties of wheat. This type has much longer 'hairs' than the other giving the appearance of a cross-breed between wheat and barley.
