Baked lentil and vegetables with feta cheese

Inside the beutiful old Schulze Baking Co. building, which will soon be reporposed as a data center.

These are probably more "muffins" since I baked them in a mini muffin pan, but the recipe calls them donuts. They are the perfect size to pop in your mouth!!

 

The tops are dipped in melted butter and then rolled in cinnamon and sugar.

Sorry I've been MIA for the last couple of weeks. I've been lacking inspiration for a while and the gloomy winter weather doesn't help. Torrential rain for weeks and relatively warm temperatures mean that, unlike most of the rest of the Northern Hemisphere, we don't even have any snow for some creative shots! And boy do we need some with those Winter Olympics starting here in just three weeks!!!

 

A car accident last week kept me busy with insurance paperwork, calls to the body shop, and visits to the doctor and chiropractor for whiplash suffered by myself and my three boys! Luckily we're all doing fine now.

 

Oh, and I had my first real photo shoot at the weekend for a local Day Spa needing shots to update and improve their website :-))

 

Anyway, thanks to those who sent emails and messages - I appreciate your concern. I'm back sparodically and will catch up with your streams in the coming days.

my package for a spring themed baking swap

Quick and easy dish for those days you are in a hurry, yet delicious!

Your favorite spaghetti sauce , canned or home made.

You favorite Ravioli frozen or homemade.

Mozzarella cheese.

Layer all the ingredients (cook ravioli first if using frozen ) top with more cheese and bake at 350 till hot and bubbly!

Delicious with warm crusty french bread!

Raspberry Sweethearts

I love the spicy and fragrant breads and cakes associated with fall and the holidays and this is one of my favorite recipes. It's a pumpkin bread full of walnuts, semi-sweet chocolate chips and flavored with nutmeg. It's a King Arthur flour recipe that I've used again and again over the years. Dinner tonight: Baked chicken breast, and wing with salad. Arugula & Boston lettuce. Strawberries, blueberries, cherries, pistachios, walnuts and almond slivers. Tablespoon of thousand island dressing (the good kind without a bunch of high fructose corn syrup). Sparkling orange water.

Easy dinner...chicken and mushroom rice in creamy sauce, topped with lots of morzzarella cheese and baked to a golden brown.

i'm planning to transcribe the recipe soon; it's an oatmeal cookie recipe from 'the pepperidge farm cookbook' (which is way better than it sounds, very authentic and homey) modified to switch out maple syrup for sugar.

My wife prepared an egg bake for our Christmas day breakfast. I added ketchup to my piece.

I made baked cheesy rice. I used pork, kimchi, mushrooms, red pepper and cheese.
