Baking bread - or dealing with any kind of yeast dough - always makes me calm and relaxed. The texture of it is so fabulous - slightly springy, a bit warm...
This was for tekakor - sweet flat buns for tea.

we ordered a cast-iron muffin tin.
it is tiny. it would make muffins that Lu would think too small.
so we turned it into a baked egg pan instead.

Baked Chicken with Mustard Crumbs (see below) over Portuguese Tomato Rice; peas and corn; fruit cup; pickle and olives; Hummus Deviled Egg
Chicken recipe: bake boneless, skinless chicken thighs for 12 minutes at 350F. Slather with grainy Dijon mustard and roll in bread crumbs - spray with oil. Bake for another 35 minutes.
Personally, I like a baked crab cake better than a fried one. I have been playing around with some recipes, but I kinda created my own by combining several elements I enjoy. Too bad lump crab meat is so expensive though. Also, it's rather unfortunate this was a last minute decision because I had no capers or lemon slices for garnish.

My contribution to the New Year's brunch. Eggs baked in a tortilla with mushrooms, shallots, thyme, fontina, parsley.

Here's the recipe/instructions:
Basically, you cut tortillas into quarters, and use two overlapping quarters to line the greased cups of a muffin tin (points toward the center). Add a teaspoonful of filling (I sauteed mushrooms in butter with shallots and thyme). Crack an egg on top (use medium, not large eggs or they might overflow). Sprinkle over shredded cheese, fresh herbs, salt and pepper. Brush the exposed parts of tortilla with melted butter.

Bake until the eggs are cooked to your liking. I believe I baked mine at 400 for about 12-15 minutes, which cooked the whites but left the yolks a little soft. They can be eaten out of hand, or served on plate with a bigger breakfast. They taste fine even at room temperature.
