The microwave cart rolls aside to reveal a station full of baking equipment. The power strip means I can use my mixer, blender, and food processor without getting in Josh's way while he's cooking.

Baking in order to shoot for the Guardian Camera Club December assignment. A good excuse to eat a lot of cake.
Baked Ziti Supremo
1 cup Sorrento ricotta cheese
12 ox Sorrento mozzarella cheese, shredded
1/2 pound Sorrento Provolone cheese, sliced
1 pound dry ziti pasta
2 tablespoons olive oil
1 onion, sliced
1 teaspoon dry basil
4 cloves garlic, chopped
1 pound ground beef
40 oz spaghetti sauce
salt to taste
1/2 cup of sour cream
3 tablespoons freshy grated Parmesan cheese
Bring a large pot of lightly salted water to boil. Cook pasta in boiling water for 10-12 minutes until al dente. Drain water from pasta. Heat olive oil over medium heat cooking the onion, basil and garlic until brown. Stir in onion mixture and the spaghetti sauce. Season with salt. Reduce heat to low, and simmer for 15 minutes. Pre-heat oven to 350 degrees F (175 degrees C) Grease a 9X13 inch baking dish. In the prepared dish, layer 1/2 of the cooked pasta, provolone cheese, sour cream, ricotta cheese and a little less than 1/2 of the meat mixture. Then layer the rest of the pasta, mozzarella cheese, remaining meat mixture and Parmesan cheese. Bake in the preheated over for 20-30 minutes, or until heated through and cheeses are melted.
A few days ago I talked over at Chiot's Run about how much I love in season citrus. I don't buy oranges, grapefruit or lemons at the grocery store throughout the year. I wait until they're in season and order cases from small farms in a sunnier, warmer place. Citrus season is especially wonderful, because it falls during those dull dreary days for those of us in the north. There's nothing more delicious on a snowy morning that a baked grapefruit for breakfast!

I chose to bake cookies today and as I sat there and watched my daughter and smelled the aroma of sweet chocolate fill the air, a tear came to my eye. On days when so much is going on we sometimes forget to stop and look around and appreciate the simple things. Elaborate cakes and cupcakes sometimes don't bring the same smile as simple and sweet chocolate chip cookies.
Take some digestives, butter, sugar, cream cheese, sour cream, cornflower, eggs and vanilla extract and pod. And you have yourself a wonderful dessert.....
Here is a great lunch, dinner or snack year around! If you are baking these in the summer, get up early to avoid the heat. These will keep for several days and can be reheated in a toaster oven (or microwave). The texture of these falafel balls will be slightly different than what you are used to. That is caused by baking versus frying, and using baking powder and potato starch instead of flour. These falafel balls are Passover Kosher!

Made myself a little baked pasta tonight. It's just pasta, pasta sauce, italian sausage, and some mozzarella cheese baked all together in the oven for about 15 minutes. It is just the right amount, with a little bit left over :)
this is what I do when I get home after an afternoon of drinking. I buy everybody bottles of water and bake cookies. I am the best roommate ever. Also check out my sweet table-top oven. If I want to bake anything bigger I have to find somebody with a real kitchen.
