Back inside from the snow, feeding the backyard birds...Brrrr

 

Mushroom Soup

 

1 Tbsp olive oil

4 tbsp unsalted French butter

1 sweet onion diced

1 large shallot diced

6 cloves garlic diced

 

1 1/2 lbs. Mushrooms sliced (any kind you prefer or a mixture. I used a combination of Cremini and rehydrated dried Porcini)

 

1 tsp dried Porcini powder

1 tsp smoked paprika

1 tsp dried thyme

1/2 tsp oregano

1/2 tsp ground laurel

1/2 tsp white pepper

1 tsp sea salt

 

1/2 cup white wine

 

3 cups mushroom stock (substitute vegetable or chicken)

1/2 cup milk (can use heavy cream or crème fraîche)

1 tsp sherry vinegar

1/2 tsp Worcestershire sauce

 

In a large sauté pan, heat olive oil and melt butter. Sauté the onion and shallot until soft and translucent. Add garlic and cook for a minute. Add mushrooms and continue to cook over medium high heat. Stir in spices and seasonings. Once the mushrooms have given up their water and all has evaporated, deglaze the pan with wine. Turn of heat once the wine has reduced and the mixture has thickened.

 

Transfer the mushroom mixture to a large blender jar (2+ liter)

Add stock, milk, vinegar and Worcestershire sauce.

 

Carefully blend on low speed first, then increase to high or “Soup” setting - 7 minutes until steaming. Taste for salt. Serve with croutons and drizzled white truffle oil.

 

Be quite cautious blending hot contents, not all blenders can handle this and you could have a bit of an explosion; if needed, blend in smaller batches to avoid danger.

I snapped this a short time ago, this is what we're getting today...enough I say!

I was wondering whether or not to continue with my journey in Glen Cannich when I noticed the incoming snow shower, but I carried on and enjoyed a good walk in sunshine with Archie the dog.

At last we reach the rocky and barren summit of Cairn Gorm itself. The weather station located nearby is not quite the full summit, which is actually slightly over to the left, but it does provide shelter from a very cool wind blowing at this altitude. As it's lunchtime, we stop and refuel once more before exploring more of the summit.

 

Cairn Gorm, the mountain from which the Cairngorm mountain range gets its name, stands at 1245 meters (4085 feet) and is my 4th Munro of the season, my 27th in total. The hike (no bike this time) sees me covering a circuit of just over 7 miles and making an elevation gain of around 762 meters (2500 feet).

Five years later and the weather is similar!

Langland Bay two days ago and a far cry from today’ s weather which is very muggy and we've had the first rain that we've had in a whole 5 weeks

A good walk this afternoon, along the side of Bossington Hill from Allerford to Hurleston Point.

The weather was ever changing, from bright sunshine to heavy rain.

An endless maze of geometry and light, leading back into each other, melting into a sea of reflections.

 

This is the façade of a local high-rise office building. I've passed by this building countless times over the past 5 years without giving it a second though, but this time, with my camera in hand and loaded with a test roll of Adox Color Mission, the reflected colors looked beautiful. And so, for the first time, I took a photo of it.

Fluffy and perhaps a tad angry? The weather was pretty miserable.

I came across this during a survey of some old Barns, just thought this was a brilliant characteristic piece of genius, an old docket hatch.... just loved the rust and old bent nails. the barns are to be taken down and rebuilt with a modern touch ... you just cannot replace this sort of character ...

 

I Have been crazy busy recently with work.... and still am ... apologies to all for my lack of comments and visits recently ....
