Because I don't like things as sweet, I'm going to use 7 C of sugar, and 9 C of water. (All of this can be pretty approximate.)
What you want is to end up with about 2.5-3 quarts of simple syrup to add to the three quarts of fruit juice.

these cones are filled with maple syrup that's been boiled down to become almost taffy. very traditional and very yummy and very sweet.

The syrup comes from the evaporator to the filter press to remove "sand", a final residue in the syrup.
