these cones are filled with maple syrup that's been boiled down to become almost taffy. very traditional and very yummy and very sweet.

The syrup comes from the evaporator to the filter press to remove "sand", a final residue in the syrup.

It's fruit. It's sushi. It's both! Watermelon Maguro, Pineapple Tomago, Cantaloupe Sake, and Strawberry Hokkigai. I used coconut rice, drizzled chocolate for the nori, and balsamic syrup in place of the soy sauce. Sided with pickled ginger and since I was lazy, wasabi posing as royal icing posing as wasabi. Don't forget the Pocky chopsticks!
If I do it again, I'll make coconut bars for the rice and chocolate sauce for the soy.
