I let Millie pouch some of her favourite dried root vegetable treats straight out the box. She packed SOO much in her pouches, this is what she looked like when I held her up!

We are having a Shadow Fest in town and spotted this "stuffed" groundhog this AM. He didn't see his shadow either!!!

Negativ-Scan

Stem removed, brushed with a marinade of olive oil, balsamic vinegar, crushed garlic, Dijon mustard, and Maggi, seasoned with salt & freshly ground pepper.

 

'Stuffed' (added on top) with finely sliced (fingernail sized) and sautéed baby zucchini, baby eggplant on onion and garlic, finely diced beetroot (steamed until tender before adding), the stems diced and sautéed with the rest, black quinoa (cooked, of course), the whole mixed up with olive oil, a bit of finely diced tomato.

 

Top with grated cheese (I used cheddar, but parmesan would do nicely, too), a good sprinkle of smokey paprika, and baked for ±20 minutes in the microwave at microwave 2, convection 180°.

 

The mushroom should come out tender and juicy, the cheese creamily melted and slightly browned.

 

Sprinkle some freshly-diced parsley over the top and serve...

 

Fine piece of 'steak'!

Stuffed tomatoes (Mahshi). A popular dish in the Middle East. Styled, photographed and edited by me.

I made him, it's my very first attempt, all hand sewed... my fingers hurt! XD

 

It's cute but has a loooot of defects, I will have to work more on the patern ^^

Can one ever have enough brushes?

Pepper stuffed with quinoa and spices.

 

Select (preferably) bell peppers that can be cut into halves — they sit better in a baking dish.

 

Cook the amount of quinoa you want according to the directions. I cooked too much: about 1/3 of a cup would have bee about right for 2 peppers, but quinoa can be used for lots of things!

 

Prepare a sauce: I used olive oil, lemon juice, a splash of Maggi sauce, diced Kalamata olives, 1/2 diced jalapeño chilli,a small diced tomato, a couple of forkfulls of capers, a tablespoon of dried Greek oregano, a dash of dried basil, and a couple of crushed garlic cloves.

 

Mix that all up and let it blend for a few minutes.

 

Heat your microwave/convection oven to about 180°C (360°F)

 

Stuff your peppers, garnish with some grated cheese and dust with smokey paprika. Place in an oiled baking dish, covered.

 

Cook ±35 minutes covered, and let sit for a little while longer, until the pepper shells are soft.

 

Warm your plates (if you haven't already on the top of the oven, and enjoy! :-)
