Full menu: zucchini and broccoli quiche, antipasto skewers (olives, tomatoes, Italian hard salami, peperoncini, and mozzarella), stuffed mushrooms, mini shrimp cocktail, wheat thins and carrots, red peppers, and celery with both ranch dressing or homemade hummus, fruit tray (grapes, strawberries, and canteloupe), cardamom bread with butter, raspberry cheesecake, brownies, homebrew beer, assorted wine, hot coffee (including decaf), tea, green apple sparkling cider, mixed harvest cider, blood orange sparking cider, homemade sweet tea.

...there are these times that few things from the fridge have to go...either coz their expiration date has reached or coz they are left overs from another cooking session.
I try hard not to throw food, which calls for improvisation...especially when the case described above occurs.
Today was such a case and a quick lunch snack was created from the following ingredients:
-> three red, long peppers
-> two big slices of ham
-> 100gr of feta cheese
-> two wholewheat round slices of sandwich
bread
The outcome:
seen above...It is definetely not the most appealing picture, neither is it the most goodlooking snack, but it tasted quite good and it surved its purpose: satisfying hunger and putting into good use left overs.
Just for the record, first the ham and then the peppers were thrown into a pan with a bit of hot olive oil. At the end the feta cheese was added ( it doesn't need long as it melts easily) and fresh pepper on top.
Serve the mixture on the sliced bread...ready to eat!
A frozen snack in this summer heat is definitely a big yes! In addition to hardly dirtying the dishes, the recipe is quick and easy. So you can cook it in the morning and then go out to get some sun and finally come back to enjoy it as an afternoon snack.

I can't tell what she's eating. It's 100 degrees and humid under the midday sun, so chocolate is right out. I messed with the color treatment in PhotoWizard to get this slightly surreal stormy effect. (channel mix to grey, map to luminosity of original and sharpen)

Bikepacking the Oregon Outback - Across the state of Oregon in the high country
Donnie from Velodirt and I rode our bikes across Oregon the hard way. Starting at the Amtrak station in Klamath Falls we struck out on the 100mi OC&E Rail Trail and then continued to head straight north to the mouth of the Deschutes River. I can honestly say it was the best bike camping trip I've ever been on. Astounding country and riding out there.
Look for Velodirt's High Country Classic race following the route in May 2014.
