Exhausted and starving after ziplining we had lunch at a little restaurant near our hotel. I was excited to find they had arrachacha. My arrachacha and plaintain dessert cost me less than $4, one of the cheaper meals on the trip.
Glazed chicken liver on top of crispy bacon and fried apple pieces, and rice that's been flavoured with parsley and a little bit of butter; pan-roasted root vegetables, plus a few cucumber slices to fill up that last corner of the bento box.
I'm not a big fan of liver, but I bought a whole chicken the other day that came complete with a baggie of squiggly bits and giblets, and I didn't want to just throw it away.

I can't find anything online under "tuckahoe" that looks like this. Anyone recognize it?

Mince garlic, put it in olive oil with salt and pepper. Preboil beetroots while peeling and chopping the other root vegetables. Peel and chop the boiled beetroots. Mix everything including the garlic oil, let it rest an hour, cook in the oven until wanted softness.
Here's a healthy vegan dinner you can easily create yourself:
I used almost all organic produce, this meal Tastes awesome, looks amazing and gets you plenty of vitamins and minerals as well as your healthy fats!
what you need:
Half a large Yam
10 small red potatoes (cut in half)
1/4 of an onion (chopped large)
5 Medium Carrots
Olive oil
Oregano
Salt and Pepper
Best served with a protein dish like a miso or bean/lentil soup! (serves 2)
Bake in the oven for ~45 minutes at about 375. (check often as ovens vary)

I harvested some Warba potatoes today. I started with 4 seed potatoes in the grow bag (3 on smaller bags). I'm super happy with the crop from one bag and I still have 6 bags to go.
3rd Course: Neah Bay Black Cod, wilted romaine, wild matsutake mushrooms and Carola Potato Blanquette.
Here are two heads of horseradish, dug up from my garden entwined in some kind of erotic pose. The whole plant was a bit of an orgy to be honest, but now resides clean, grated and preserved in vinegar ready to be smothered on roast beef. A great end to a beautiful relationship.
