Roasted Beet, Roasted Parsnip, Roasted Black Potato, Roasted Carrot; roasted hazelnut crumbs with coconut cream

A healthy dash of good-quality extra virgin olive oil goes a long way when roasting vegetables.

Roasted Red Beets with House-Smoked Ricotta, Blood Orange Supremes, Shaved Fennel and Sunchoke Chips.

 

I'm a late-blooming beet-eater, but this salad/app provided sorely-needed sunshine to the eyeballs and winter-weary taste buds; sweet, fork-tender ruby roots with spikes of citrus, anise, crispy-salty-earth kicks from the chips and wisps of smoke from that creamy ricotta.

what is a series of root vegetable hats without a beet? the inspiration for this hat came from my childhood memories of beets and beet greens that grew in our garden. if i hadn't been going for the beautiful contrast in between the beet and its leaves, this one certainly would have been embroidered in shades of pastel pink. there is also a closeup of the embroidery in my photostream. 1 of 2.

Now that's what I call a beet! Softball sized but sweet and tender all the way through. Heirlooms did me proud this year!

It definitely helps to have more racks in the oven for bulk cooking. Nice to have the church kitchen too, with two of these ovens.

Potatoes are typically fried or drenched in fatty sauces, but a potato on its own is remarkably low in calories (at 132 per cup). This humble vegetable is also high in vitamins C and B6, providing about 25 percent of the daily requirements for each nutrient.

Intensity of flavour and vision. I know most of the elitist food world mocks the humble rutabaga and the turnip, but done right these root vegetables are truly incredible, delicious and soul satisfying.

Coming out of the oven - Tender, sweet, and buttery roasted sweet potato wedges and cubes with fresh cilantro, garam masala, sea salt, sweet and nutty fennel seeds, and fragrant whole cumin seeds.

 

This is the base for my sweet potato salad dish.

Delicata squash, Oriental sweet potato (satsuma imo) and Okinawa sweet potato (L-R in photo) add a sweet balance to the chiles in my Thai curry.
